Youho Nama Hashiwokake Junmai Unidentified Floating Yeast Brewed with UMA-like expressions, but that's only true because the yeast in the air is used in the process of brewing sake. I was worried about this one, but I went for this one because it is closer to the affected area. It has a strong flavor typical of sake brewing. The astringency and aroma are also quite strong. The taste is very drinkable.

Kagamiyama Junmai, freshly pressed new sake. The manager gave me a free gift because tomorrow is my birthday. Thank goodness. The last remaining cup in the bottle has been exposed to air and has a nice roundness to it. It has a high aroma and sweetness that is typical of new sake, so it's the kind of sake you can drink in a good mood.

I was about to get ready to leave when the manager told me that there had been a reservation cancellation and that I was still good to go. Yay. I added some more sake to my order. Nanbu Bijin Special Junmai. I sometimes drink this sake, but it is delicious, isn't it? It was in the fridge that won't be opened tomorrow, so it might not be available tomorrow.

Although I will drink a lot of new sake, draft sake, and orikarumi tomorrow, I still want to drink today if there is any sake I can drink. So, Gichigi Gohyakumangoku Junmai Harajuku Orikarami. It has a pungent and bitter taste with a hint of lees. It tastes like it was made for this time of year. The texture of the lees is not so strong, so it is much easier on the palate.

I'm very tired after working very late today, so I'm going to drink some good sake and win the race. So I went to Fukuno Tori Iidabashi. Tedorigawa Autumn Junmai. This is the autumn sake of Tedorigawa. The umami and spiciness spread gradually. This is the taste of hiyaoroshi. It is also nice that the tingling feeling of alcohol lingers around the tongue for a long time.

So I went to Fukuno Tori Iidabashi to check out the weekend's events. Today's service sake was Katori Namahashi 90, made with 90% polished rice and brewed with a "namahashi" (sake yeast) yeast, which is quite a strange spec. It has a very rich flavor and full-bodied taste. The aroma that comes up later is also quite strong. It is very drinkable.

Kirakucho Wakanae at Fukuno Tori Iidabashi. This is so-called summer sake. The manager showed me to the restaurant because they had some summer sake left on the regular menu. When you put it in your mouth, it tastes mildly bitter. However, the bitterness quickly and gently fades away. It is a gentle sake. It can be drunk quietly while easing the heat.

Koshinoshiratori Dry Special Junmai Unfiltered Harajuku Sake from the manager's secret sake at Fukunotori Iidabashi. This sake is a blend of Arashigiri and Yame, and has both a full aroma and a thick flavor. It is not a junmai ginjo, so the aroma is moderately strong. It can be said to be a sake with a good combination of aroma and flavor.

Today we went to FUKU NO TORI Iidabashi branch. First up was today's service sake, Mine-no-Hakubai Honjozo. Mine-no-Hakubai is a standard sake at this restaurant, but it's cheap to begin with, so how much does this service sake cost? ...... It is a dry and light sake, as is typical of honjozo. It has a hint of alcohol, but not too much, and the aroma is subtle, easy to drink, and delicious.
