I opened the bottle earlier after seeing Muro's post 😆.
Yamadanishiki from Akitsu, Hyogo Prefecture 🌾.
Sweet like white grapes. Elegant and transparent sweetness 😊.
The slight bitterness in the aftertaste is a neat touch 🙄.
Ginjo aroma is gentle and soft 😌.
It seemed hard for Fushimi water due to the micro-foaming, but the flow through the throat reminds me of a mountain stream: 🏞️

October 1 is Sake Day 🍶.
I saw the Central Association of Sake Brewers of Japan doing a live event on YouTube 👀.
That's 500 check-ins on such a day 💪.
I'm such a "Mimuro maniac" that I reflexively pick it up whenever it comes into view, so I chose the seasonal Mimuro Cedar here 😤.
The flavor is like a tropical fruit, clear and moderately sweet.
The acidity also seems quite restrained, and the overall appeal to the palate is very mature 🧐.
And the ginjo aroma is gently sweet 😊.
I'm glad it has the Mimuro cedar character behind the reserved and calm taste 🥰.
It looks like it would go well with autumn flavors like mushrooms and autumn fish, but unfortunately I don't have any of those ingredients at home...so I don't think I'll be able to try it 😅.
Still, it's the best sake to drink slowly on a long autumn night 🌙😆.

Bony sweetness and a bit of sourness.
Even the sweetness and acidity is strong and feels like a packaged sake. The microcarbonation is also still the same.

The taste is sweet with a slight sourness.
The mouthfeel is slightly carbonated🫧.
It goes down the throat nicely and does not feel stuck.
The finish is good due to the acidity, and there is little lingering aftertaste.
The sake has the character of a packaged sake, but with an accentuated individuality 🍶.

The sake I wanted to drink the most from the packet series, Mirai 😊.
The color is clear.

The color is clear.
Little aroma. It is not Mimuro cedar-like.
The first thing that hits the palate is a slight carbonation.
The mouthfeel is watery. It seems to have a harder texture than Bodhidhara 🤨.
The box label says it is a fast brewing, but it has a mellowness that is more similar to a sake than a fast brewing. However, I wonder if it is a fast brewing compared to Bodhi yeast 🤔.
The sweetness and bitterness like Mimuro cedar appear in the aftertaste.
The sweetness and bitterness spread and melt in the mouth🤗.

When the bottle is opened, it has a unique sweet and sour aroma. It has a sweet aroma typical of Mimuro cedar.
The taste is refreshingly sweet. It has a refreshing melon-like sweetness. Or like dark pear🍐.
The mouthfeel is ultra-fine and carbonated🫧.
The aftertaste is tight, astringent, and slightly acidic.
It has a lightness that goes down the throat nicely.
More mature than the Yamadanishiki Bodaihashi we had before 🤔.
The flavor is complex and you want to enjoy it slowly and chew it up 🍶. よすけIt seems to be snatched away by the pure white wind. A slight bitterness lingers on the palate.

The color is clear.
When the bottle is opened, it has a sweet aroma. It has a banana flavor with a slight aroma.
The taste is crisp and sweet. It is not thick, but rather cherry-like.
