On my last night in Yokohama, I went out for a drink with a colleague from my former workplace. Hanasaku near Sakuragicho station. They have 20 kinds of sake that change daily. It is a small restaurant that seats about 15 people, and it fills up quickly. Yesterday, the owner was alone, so it looked busy. So I didn't take a picture of the bottle labels. I was sorry to ask them to do so. The first glass was my first Shinshu Kamerei😍. You can see why it is so popular. Gentle sweetness and a hint of sourness, almost no bitterness or spiciness. Delicious 🥰. 90ml was gone in no time. This is the one I want to drink at home.

The aroma goes away from the nose in a flash. After the sweetness and sourness comes, the bitterness and the sake feeling It seems to go well with strong flavored food, but it remains at the end.

It is characterized by a sweet mouthfeel and taste and a strong aroma that only a noble sake can provide. It also has acidity, which produces a sweet taste that is not too strong.

Sweetness comes first, easy drinking mouthfeel. The power of the light cloudiness can be felt in the throat. I want to match it with the peculiarity of the duck which is smoked. The fruity aroma is strongly felt

Lightness on the palate that makes it hard to believe it is undiluted sake. The refreshing taste typical of Junmai Ginjo Very easy to drink. The remaining aroma is fruity.

Not flashy, but mildly fruity. Good acidity, sweetness, umami, riceiness, and a bit of bitterness, very well balanced 👍. What's next, immaculate? The town?
