zitting cisticola (Cisticola juncidis) Received at a brewery event. Casual label. Easy to drink. Named for the combination of the founder's family name "Higashi" and "Tsuru", a symbol of longevity and good fortune. The brewery has been in business since the Edo period but temporarily went out of business; in 2011, the 6th generation brewer reestablished the business and has renewed the quality of the sake to be modern and aromatic.

Chinese cabbage (Brassica campestris var. amplexicaulis) shata (unit of land area equal to one-fifth of a tan; ~1950m) I tried it because it was recommended to me by Manager Sasaki, who recommended it to me. It tastes like Tengumai and is delicious. The label is cool too. Named after an old tengu legend in Hakusanroku at the foot of Mt. Famous for re-evaluating and reviving the powerful flavor of Yamahai. Currently, the 8th generation, Mr. Kazunari Kurumata, has taken over the brewery and is focusing on overseas exports and aged sake.

The label is melted...it was originally painted with brush strokes. It has a powerful flavor that is typical of Yamahai and raw sake. It has a citrus-like acidity and a strong rice flavor. There was something called "? I had a "sashimi of ? I found mine to be a sashimi of a humpback shark. The fat was as good as that of cultured yellowtail, and the texture was as elastic as flatfish, and a firm texture like a flatfish. The sake blended well with the fat, and I could eat it without any smell. Taste level ☆3/5

Eikohuji Crimson Glory Sake strength -66, acidity 3.4, sweetness like plum wine due to the red yeast. It tasted like it could be served on the rocks or with lemon and soda. Delicious. When I saw the specs, it reminded me of Tottori's KARSIS, but it was totally different. The name "Fuji" comes from the fact that the character for "Eiko" was added to the original sake name "Fuji" at the time of its establishment to express the wish for prosperity. It is also said that the symmetrical character "Eiko Fuji" represents the brewery's philosophy of "sake brewing with no two sides of the same coin.

Made in wooden vats, powerful appearance at 17°F. It is refreshingly spicy in the mouth. If you include a lot of it, the alcohol will leave the nose, It is not as peculiar as expected and has a neutral mouthfeel. It has a slightly dry graininess and good acidity. Taste: 3/5 stars.

yellow-edged lyrebird (species of fish, Variola louti) Gentle and sweet fruity. The label is that it is a mussel, but the nudibranch is still more convincing. The brand name "Tocho" (suitable for the king of the Orient) was named by then Prime Minister Kei Hara in 1920.

The aroma doesn't rise that much. When you drink it, it is fresh rice juice! Sweet aroma like doburoku. It has a slight bitterness. The texture is cloudy but surprisingly smooth. The flavor is quickly absorbed by the mouthfeel. Taste level ☆3/5

Trolley texture. Powerful value of 18 degrees, but...? Surprisingly refreshing and gentle taste. It has a silky sweetness and a light but rounded rice flavor. There is a hint of bitterness. It is not as guttural as expected, but it is a dense sweet and umami type. Taste: 3/5 stars.

The aroma doesn't rise that much. When you drink it, it has a juicy texture, like lime and pear. It has a slightly astringent, acidic, and cloying taste. The pull is light and refreshing, which is typical of summer. Goes well with sea squirts. Taste level ☆3/5
