We had this because the sake, which was too carbonated and difficult to drink, had just been opened. It was delicious. The snack was the ultimate Negitoro (negitoro) mixed with hon tuna and southern bluefin tuna for 600 yen.
It was named after the brewery's name in hopes of spreading the name of the brewery.
Currently, the brewery is led by fifth-generation brewer Akiya Machida and his wife Emi Machida, who is the toji (chief brewer), and they make sake together as a couple. (カワダ調べ)Eikou Fuji hoshimatsuri (species of buddleia, Buddleja mandshurica var. japonica)
It looks like Machida Sake Brewery is coming tomorrow 7/14 to Ueno Gyoso. I just heard about Angel 4 at some place and would like to go but time may be difficult.
The name of the sake comes from the character for "glory" that was added to the original sake name "Fuji" when the company was founded, with a wish for prosperity. It is also said that the symmetrical character "Eiko Fuji" represents the brewery's philosophy of "sake brewing without backs and sides. (カワダ調べ)Fukamori Kibune Shibori
It is a small sake brewery with a capacity of 40 koku, but the sake is made with great care. It is labeled as dry, but I didn't feel it was that dry, just clear. It is mild and delicious.
