After swallowing, there is a pungent alcohol taste, which is typical of unfiltered wines. The sweetness is strong, but there is a bitter acidity, and the sharpness is relatively sharp. Anago no kama-yaki (grilled conger eel) is a limited rare menu item. Preference 3/5

The alcohol content is high and the acidity is about the same as usual, but it is stronger than usual, and there is a lingering bitterness, astringency, or astringency, which makes it a good match for fatty foods. Maybe it is for foreigners or French cuisine. If you compare it to wine, you might compare it to wine. The name comes from the character for "glory" that was added to the original sake name "Fuji" when the company was founded, with the wish for prosperity. It is also said that the symmetrical character "Eiko Fuji" represents the brewery's philosophy of "sake brewing without backs and sides.
