This sake is made by Itzumi Shuzo, the smallest sake brewery on Sado Island.
It is a delicious sake, light and dry, but with a strong umami flavor.

Ukiu-ki" is a word that Yamamoto apparently gave to the sake to evoke images associated with spring, and it has no particular meaning. Nevertheless, this sake is gorgeous, reminiscent of spring, and as one would expect from Yamamoto, it is easy to drink.
Junmai, unfiltered, raw sake, 100% Kame-no-o, 2021 year old. I usually drink aged ones, so this might be my first time drinking a young one. I'm a light drinker, so I thought this would go well with rice.
