The final dish was a junmai ginjo from Miyakanbai, which was considered the highlight of the day at the Ginjo Tuna Shinagawa restaurant. The reason I brought this last was because I had chosen the 90-minute all-you-can-drink option and was about to run out of time, so I ended with my favorite sweet-and-savory type (laughs)! Yeah, it's delicious. 😁 Since it was my first time at this restaurant, I ordered it thinking that 90 minutes would be enough, but it was a very comfortable restaurant, so I didn't have enough time 😅. As a system, you choose your own brand, pour the amount you want into your glass, taste it, and go on to the next. Quality, not quantity. It is hard to find a restaurant where you can be selfish enough to check a brand you have never had in two or three sips 😱. Customers were advising each other, and I was also happy to recommend Sansho to the younger ones. 😁 I don't know how they make a profit, but I would like to go there again if I have a chance. 👍 The manager is always smiling and helpful to the noisy drinkers. Next is the Ginjo Tuna Shop collaboration sake with the Izumihashi Dragonfly label. Slightly yellow unfiltered unpasteurized sake. It was thought to be sweet and tasty, but it was refreshingly dry. This is also a food sake to be served with tempura.

Next up was Ichinoya Kei Junmai Daiginjo from Nagano. Ichinoya is known for its Ryusuisen. I drank it with that image in mind, but everything tasted mature and clean. The umami of the rice can certainly be felt. The concept is probably different. If anything, I would say it is more of a food sake. I had it with tempura. 😄

Next up was So-no-Kangiku's Monochrome, Junmai Daiginjo. Sono Kangiku, which has become a representative of sweetness, is usually placed there. 😅 Oh, it's so good 😁. I gradually spent more and more time talking with the manager. Thanks to the manager for being so polite to my drunkenness 🙋.

The next brand name is Shoryu Horai. This sake is from the same brewery as Zanso Horai. I drank it with that image in mind, but it was totally different. If anything, it was a little dry and robust. If I had to pick a favorite, I would say I prefer Zanzo-Horai. Let's see, how many cups have I had? 😅 The 4th picture is the highlight of Ginjo Tuna Restaurant, Shijimi Soup. For some reason, it goes very well with sake. The store's signature soup.

Next, Takachiyo made a sake on a trial basis. Compared to the previous brand, this one is sweeter and more mature, but it seems to go more smoothly. Slightly grapefruity. I have never experienced drinking so many takachiyos before, so I thought 😅 it is indeed Tokyo! Postscript After this, I had a heated discussion with the manager? Next, Takachiyo's special junmai. Sake from Takachiyo, which is taking on various challenges, and the manager? s recommendation. It is a lightly cloudy, sweet sake, but it almost makes you go gulp it down. I was so happy to be able to enjoy a little bit of various brands! I'm sure you'll enjoy it 😁. The seats are gradually filling up. Soaking in the happiness while having a glass of peace water (lol).

Next, sake from Kagawa. Kawazuru. I choose it because of its label design. Oh, it is indeed a honjozo. It's not a brand I would normally choose, but since the system allows small quantities and you pour it yourself, I matched it with tuna chutoro (medium fatty tuna). There were quite a few customers and the place was bustling with activity. Fun to be able to choose from a variety of brands. 😁

Yokoyama SILVER ⭐️⭐️⭐️⭐️ Junmai Ginjo Hiyoroshi 100% Yamadanishiki Kake rice 55%, Koji rice 50%, ALC 15 Up until now, Yokoyama SILVER has met two types of sake: "Unfiltered Nama-Ginjo-Shu Super-Harsh 7" and "Fire-aged Junmai-Ginjo-Shu Super-Harsh 7", so we decided to register this "Hiyoroshi" as a new sake 🤗.
