flos_lingua_estI am not a fan of Kangiku, but when someone recommends it on the web or at a store, I tend to want to buy it. I thought I was done with it for this year, but I was able to buy it at another store. LOL!
It has alcohol + ginjo aroma similar to apple, muscat or lychee. It has a moderate melon-like sweetness with umami, and the fruity overtone gives a sweet impression, but the exquisite tightness of the acidity does not give it a lazy image at all.
The impression is quite clear. Clear means that the taste is clear, but the development of the flavor is clear, and the transparency of the flavor, without any cloying taste, is a good thing. The lack of bitterness may also contribute to the clarity.
The Denshogiku was incredibly delicious last year, so I am looking forward to drinking it again this year, but this Monochrome is also quite delicious. No wonder it is so popular.

I love the classic Sentori Oumachi anyway, but I will try Kame-no-o as well.
Although it is a medium-bodied sake, unlike modern Sengoku, it has full of character such as sweetness and umami. Of course it tastes great cold, but even cold, not too cold, it has more character and is obviously tastier!
When you drink it, the sizzling image of biting into a piece of fruit spreads out, and it is just so delicious! The sweetness, flavor, acidity, and bitterness are in perfect balance.
It has a strong umami taste but is not cloying. It is sweet but goes well with meals. This is probably due to the excellent balance between sweetness and sourness. The bitterness is similar to an astringent taste, and it is delicious as an accent without being assertive.
When I write this, you would think it is a vigorous sake, but in fact it is calm and elegant. It has a pop and calmness that somehow makes you want to pair it with Western food. It would also go well with an omelette rice dish with a sour sauce...!
This classic Sentori series, Abeno's standard Junmai, and Shinshu Kamerei's Junmai Hitogokochi are my top 3 favorites. It's really delicious!

I drink this "SENKORY Hatsutaban Nakadori" every year. One of the sake that got me hooked on sake is SENKYO, and I really like this sake because it shows the best of SENKYO. It is a sake that is released at the end of the year and the beginning of the new year, but I always end up letting it sit for a few months. It's a win-win situation for me, though, because it tastes so much better and I really like it. LOL!
The aroma is not strong. It's fruity when you put it in your mouth... somewhere between cappiness and iso-ness... this is delicious! I guess it must have been the first day, but on the second day, I could detect a little appleiness in the ginjo aroma. Also, when chilled, it is like muscat.
It doesn't have much alcoholiness. It's more like a modern, light iso type... fantastic!
When it is cold, the acidity is sharp and it feels surprisingly dry. It's like a deliciously sharp sake, and when it's closer to room temperature, it has a different quality that is very nice!
It is juicy, tasty, sweet and sour, and too well balanced. I will definitely buy it again next winter! Senkinオーガニック ナチュール 2022 ZERO:nigori生酛生酒にごり酒

It was one of my favorite muddy sake that I drank last year. How is it this year?
Smooth on the palate. When I think of Sentori's muddy sake, I imagine Yukidaruma, but it has a completely different flavor, with little sweetness. However, immediately after drinking it, there is a bit of sweetness along with bubbles and acidity, like a stylish fruity sour.
The sweetness is then replaced by the umami of the rice, and it stays there until the end, along with the bitterness that appears in the middle.
Today I drank it with kimchi nabe. You sometimes add rice to the end of a nabe and make zosui (rice porridge), don't you? It is the same feeling. As was the case with Hanaboe, I reconfirmed that kimchi nabe and nigorizake go well together. There is no reason why rice and kimchi can't go well together!
When served cold, the sake is refreshing, and when the temperature rises, you can taste the richness.

I've had a short span of time for Huayou-you here. When there are rare drinks like this, I tend to buy them, forgetting whether I like them or not.
The ginjo aroma is like pineapple and very gorgeous, but the sake character is not forgotten. The fragrance is not overdone, so you can drink it with elegance. I'm actually not a big fan of sake with a hint of fragrance, but this one is delicious regardless of my taste!
The sweetness (sweetness is the main taste) with umami spreads out. The sweetness (sweetness being the main ingredient) with umami spreads out, and the underlying pineapple aroma and acidity combine to make a fruity and juicy sake that anyone can enjoy drinking.
It has a catchy sweet and sour taste, but it also has the elegance of sake, which makes it an incredible sake. This is the sake I liked the most at Hana-yosu. The reason why I liked it so much may be because the quality of the sake from the drop is so compatible with this sake.
I might buy it again if there is room in my refrigerator. By the way, I think Hana-Hiyo-Yoku tastes better if you drink it right after you buy it.

Well, I opened the bottle to compare it with the solid! What a difference...!
The aroma is mild, with just a hint of alcohol. When you drink it, you can smell the apple aroma, but the citrus aroma might be stronger. I really like this flavor! Perhaps it is because of this aroma, but I feel that it can be served with a wider range of foods than the pure sake.
I don't feel much sweetness, but I can feel a certain amount of umami. It is juicy, so you can drink it by itself as much as you want.
The difference between this and the "pure" is surprisingly hard to distinguish. I think that's why both are combined at such a high level.
As far as I could detect, the breakdown of the fruitiness of the aroma was different.
Also, compared to the lightness of Mushoku, Yumachi is more elegant, or perhaps a little heavier in body. This one may have a more wine-like atmosphere. It was a very new experience for me, as I had never sensed the difference between sake rice so clearly!

If you are tired of sweets, if you are tired of modern tastes and want to feel an old-fashioned atmosphere, or if you are tired of the vigor of new sake, this is the sake you should try.
Super dry! There is no sweetness at all! LOL!
Shinkame's characteristic is to convert all the sweetness into alcohol, but as usual, as one would expect from Shinkame!
These days, there are a lot of sake that are fruity, sour, and easy to drink. But that is not all sake is. This was a wonderful bottle that showed us that this kind of "sake" can still be at the forefront of the battle. Of course, I think this is one of the easier to drink sake among the Shinkame brands...lol.
If only it could break through the "sake" quirks of sake, it would be an excellent food sake. It goes well with meat dishes, and I paired it with spare ribs, but I couldn't stop drinking it! On the other hand, when I paired it with fish, I laughed because I couldn't keep drinking it down.

The Sentori Snowman is here again this year. I have the impression that there are differences depending on the year and the lot...
The aroma is one of plum and grape-like acidity. From the 4th day, peariness or calpis-like taste comes out.
I drank only the top clearings at first, and they tasted fresh and piquant, just like the first tank of arabashiri.
I don't know if it was because of that, but as soon as I opened the bottle, it seemed very dry...or hard. It had an aroma, a sourness, and a bit of bitterness at the end. When I mixed nigori with it, the rice flavor came out and the taste became a little richer.
But as I carefully mixed the nigori and let it air dry, the taste gradually became milder and milder, and it tasted so much better! The koji-like flavor even helps to make it seem a little sweeter, if not a little hearty.
From the second day, the flavor and sweetness harmonize and become more and more delicious. 4 days later, it is like a different sake from the first day, but it is still delicious. It is a sake that makes me think that I will buy a bottle next year because it has become much closer to my favorite taste since last year.

I am more of a classic Sentori drinker than a modern Sentori drinker, but it had been a long time since I had a bottle of Sentori sake, so I ran out to buy it as soon as it arrived... lol...
Fruit aroma... hard to tell, but it smells like gentle bananas, which I love! When you put it in, it still smells like banana. There is also a subtle muscat-ness to it.
The palate is fresh and energetic, but not at all spiky. I tend to buy new sake because it looks delicious and I am attracted to it, but to tell the truth, I am not so fond of the youth and vigor of new sake. But this one has a gentle taste and is easy to drink regardless!
It is surprisingly dry with no sweetness. However, it has umami in moderation. After the umami comes the spiciness and finishes with a bit of bitterness.
It is a fragrant sake with a gorgeous aroma, and at the same time, it is a light and refreshing sake.
Personally, when I think of Sentori's character, I think of classic Sentori, but I also really like modern Sentori as long as you know it is dry.
