I don't know if it was because of that, but as soon as I opened the bottle, it seemed very dry...or hard. It had an aroma, a sourness, and a bit of bitterness at the end. When I mixed nigori with it, the rice flavor came out and the taste became a little richer.
But as I carefully mixed the nigori and let it air dry, the taste gradually became milder and milder, and it tasted so much better! The koji-like flavor even helps to make it seem a little sweeter, if not a little hearty.
From the second day, the flavor and sweetness harmonize and become more and more delicious. 4 days later, it is like a different sake from the first day, but it is still delicious. It is a sake that makes me think that I will buy a bottle next year because it has become much closer to my favorite taste since last year.
