I am more of a classic Sentori drinker than a modern Sentori drinker, but it had been a long time since I had a bottle of Sentori sake, so I ran out to buy it as soon as it arrived... lol...
Fruit aroma... hard to tell, but it smells like gentle bananas, which I love! When you put it in, it still smells like banana. There is also a subtle muscat-ness to it.
The palate is fresh and energetic, but not at all spiky. I tend to buy new sake because it looks delicious and I am attracted to it, but to tell the truth, I am not so fond of the youth and vigor of new sake. But this one has a gentle taste and is easy to drink regardless!
It is surprisingly dry with no sweetness. However, it has umami in moderation. After the umami comes the spiciness and finishes with a bit of bitterness.
It is a fragrant sake with a gorgeous aroma, and at the same time, it is a light and refreshing sake.
Personally, when I think of Sentori's character, I think of classic Sentori, but I also really like modern Sentori as long as you know it is dry.
