It's been a while since I've had Shinsei.
It is 2023, so it is not so fresh and sweet, but I am indeed impressed with its drinkability and refreshing aftertaste.
Fudo, I must have had it a few times, but I don't remember the taste...
This time, it was an unfiltered, unfiltered, raw sake, orikarami, and full of status lol.
When I drank it, I found that it was very easy to drink and had a clean aftertaste. This is the kind of sake that women like.
It has 16% alcohol by volume, so you should be very careful. Don't try to get them drunk.

Following Suitama, a front-to-back drinking comparison.
The front side has an aged taste, while the back side is unpasteurized! Naturally, I prefer this one, but both have their own flavor when drunk at the same time. It was a better learning experience than drinking them individually.
I don't know why they chose this name for this sake from Shimane. When I looked up this brewery, I found that there are many twists and turns.
I had a chance to compare a Shinshin and a Ura-Shinshin.

The mellow aroma of barrel-aged sake and the sweetness of kijoshu gave me the experience of "sake of a different dimension," as the saying goes ✨.
I drank Suiyu and the next day I drank Uraku.
The back side is usually the opposite of the normal one. The sweetness of Suiyu is still there, but the moment of drinking is refreshing and the sweetness does not linger, which may be just the balance I like.
I had been drinking the back but didn't know the front.
The color of the front side of the bottle is dark, which is surprising even for a mirin (sweet sake).
