酔nosukeIt is a Jungin Nama-shu brewed with Misato Nishiki from Hanayuup ❤️ with a bright red-pink label.
When the bottle was first opened, it had a fruity aroma and was very juicy! I thought it would end up just being sweet, but later on, a slight sourness and a dry, bitter astringency also followed.
After a few days from opening the bottle, the sweetness that was prominent on the first day was suppressed, and the bitter-sweetness and astringency became balanced and delicious. Fresh and gorgeous, it is easy to drink and delicious! たけっちYunoka Akatake NEWBORN

Freshness is present but mild.
The sweetness, acidity, and final bitterness are well balanced.
It is a beautiful sake that can be drunk easily.

It has a gorgeous aroma of grapes, acidity, sweetness, and bitterness. As you drink more, the spiciness and the umami double in size.

The aroma is slightly green apple. The sourness comes first, and then the complex umami spreads out mixed with bitterness, and as the temperature rises, the umami becomes even stronger.
Although it has been fire-aged once, it is as fresh as a fresh sake. It is smooth, refreshing and delicious. ☺️ 酔nosukeThe first bottle for November is a junmai nama sake from Daishichi. This is a cold-aged nama sake.
Since it requires refrigeration, it has a slightly fruity aroma like muscat when you sip it while it is chilled. I never expected to smell muscat from that Daishichi! This is delicious!
As you continue to drink, you will be surprised to find a complex umami flavor with a firm acidity and spiciness!
It is a fresh and refined version of the usual Daishichi sake.
The sake is Daishichi, and the umami comes first 😆. 酔nosukeThe best way to enjoy the wine is to drink it with a glass of sake.
The aroma of grape is very strong, and when you drink it, the bitter taste follows the pear-like sweetness, and it finishes with a nice dry astringency.
Since it is a sake made over the summer after being quenched and heated rapidly, it is not too ripe and still has a fresh and rich flavor! This year's Nago Sake is also outstandingly delicious 😊.

It has been a long time since I have had a chance to taste Akabu. I had kind of passed on it recently, but I was curious about Akabu's autumn sake, so I bought it.
The clarity is amazing! The freshness, fruitiness, and sweetness remind me of pears. Despite its clarity, it is somewhat fruity in a good way, with a slight hint of banana. I can also taste some muscat and apple, maybe from the acidity (rather, from the first few days, it's mainly muscat and apple). And maybe a little bit of persimmon. It's not so much the taste itself, but the image I get from it. It's the season.
The elegant aroma and the rounded texture on the tongue make me feel autumn. And yet at the same time it retains a bit of freshness, which may surprise you a little when you think it's an autumn sake!
It is very drinkable for a 13% sake. It has a strong flavor or core to the extent that you can drink it after a very strong sake called Kurosawa without feeling any discomfort.
It gives the impression of being smooth and light, but it is also full-bodied and deep, so it gives a strange and profound impression. Above all, it is amazing that it does not deteriorate at all even after a few days!
In many ways, it has conflicting elements locked in one bottle, and as a new fall sake, I'll probably buy it again next year.

We received new Koshihikari rice that was still brown, so we went to the rice mill to polish it.

When chilled, it has a gentle melon aroma and sweetness. In the latter half, as the temperature rises, the umami bitterness and umami astringency become stronger, and the umami spiciness lingers for a long time.
It is darker in every way than the Izumikawa Junmai Ginjo from the same brewery.
