100% Gohyakumangoku is used. The name of the brewery comes from "Hitokui-iwa" (Man-eating Rock), which can be seen from the brewery. It has a deep flavor with a hint of sourness, and is very rich! The aroma is rich with apple aroma.

Sukkiri, a slight soaring delicious acidity. The refreshing feeling comes again. It is not too heavy. It is easy to drink, and I like it.

At Yutone, a small inn in Yasaka, Kyoto. I had it warmed. I think this one is my favorite out of the three types of sake I had. I would have been happy if they had a wider variety of sake on tap. All the food was delicious.
