Before the rice dish to finish, it is perfectly matched with the meat dishes, grilled young chicken with yuzu pepper, herb loin cutlet, and asparagus pork roll skewers to wash away the fat and reset the palate. shin-bi-en Dry Junmai Namaishu ⭐️⭐️⭐️⭐️ Polishing ratio 55%, ALC 14 degrees It is a dry sake with a unique taste unique to nama-zake that is slightly tangy on the tongue. Why is it "cold" for a Fukuoka sake? It was a delicious sake that goes well with summer. The shin-bi-en dry junmai I encountered on 20220628 was not a nama-shu, so I checked in newly this time. Junmai Ginjyo Nama Sake Akita Sake Komachi 100%⭐️⭐️⭐️⭐️ Rice polishing ratio 55%, ALC 15 degrees, Yeast: NI-2 This is the fourth one today. It is dry, slightly bitter, and has almost no ginjo aroma, but it is an easy-drinking sake. In case you are wondering, the second type was the "Ame-go-no-tsuki" junmai ginjo Ryoufu, which we had encountered in 20180613 and 20220719, with a label in hiragana with silver letters on a white background. 55% polished rice, al15 The third type was [Bunkajin] Junmai Ginjo-shu Summer Junmai Ginjo-shu, Polishing ratio 50%, ALC 16.5 degrees, which had been encountered in 20220519. Junmai Ginjyo 50 Nama Genjyu ⭐️⭐️⭐️⭐️ Polishing ratio 50%, ALC 16%. Today we had a get-together with the members of our company. We wanted to enjoy local fish from Hiratsuka fishing port, so we chose TAMA🤗. We decided to enjoy 6 types of sake from the "Seasonal Sake" menu instead of the standard sake they usually have 😋. First up was a sake from Saitama. Chose a brand I had never encountered before😃. Junmai Ginjyo Nama Genzake...I was very excited to see what kind of flavor it had 🤭. The aroma is fruity and a bit strong. In the mouth, it is sweet...but not cloyingly so. Furthermore, as it rolled around in my mouth, it felt like a mild tasting sake 😄. Hiratsuka TAMA: 20230602

Sake-Muku Junmai Ginjo ⭐️⭐️⭐️⭐️ 100% Yuyamanishiki, 55% polished rice, al16-17 Sake degree +2.0, Acidity 1.6, Kumamoto No.9 yeast Reunited since we met at Hiratsuka TAMA in 2018. Dry, with less of the tingling sensation of a raw sake. I thought it was a calm sake with a hint of acidity but still hip. Chigasaki Chirori: 20221223 Hiratsuka TAMA: 20181217
