Hard water (deep groundwater from the Katsuragi Mountains), rice polishing ratio 70%, ALC 13%.
It has a faint koji aroma, and when you take it into your mouth, there is a carbonation sensation that tingles on your tongue from the raw sake, and when it subsides, it is a sharp, slightly dry sake with a slight sourness and bitterness that is well balanced.
By the way...[Harazake] means that no water has been added after the moromi has been strained, but strictly speaking, even if water is added at the moromi stage before straining to adjust the alcohol content, it can still be described as [Harazake].
The master explained that since Kaze no Mori does not add water at the mash stage, it is not labeled as unfiltered unpasteurized sake, but rather as unfiltered unpasteurized sake. I learned one more thing.
