This limited edition sake is based on the concept of a sake brewed by a wolf out of two hares wearing a rabbit's skin. On the first day of sipping, it was sweet and not very sour, but not sticky. On the second day, I started to taste a little spiciness, but it was like the wolf was shedding its skin a little with a sweet base. The rest of the meal will be served over the weekend.
The bottle was so mellow that it was hard to believe that it was fire-aged, and the 4 gos of sake was consumed in no time. The next day after opening the bottle, the flavor did not change much, and the sweetness and clean taste did not linger, and the flavor did not lose to strong-flavored snacks.
It has a slight citrus aroma reminiscent of hassaku. The taste was sharp and not too sweet. The second day after opening the mouth was also very good. It has a sweet mouthfeel but surprisingly spicy. The acidity of the fresh chevre as a snack goes surprisingly well with it.
The spiciness was milder than that of the fire-aged Mitsui no Kotobuki, perhaps due to the fact that it is a raw sake.
