Kaze no Mori from Nara, with which we have a close relationship. This time it was 65% polished, but perhaps due to the method of sake collection, it was a refreshing sake with no cloying taste. Kaze no Mori is a brewery that makes me want to try many different kinds of sake.

When I visited Saga Castle, I purchased this local brand at a nearby liquor store as a limited edition for the area. It is fruity, but with a low sweetness and a refreshing acidity, it was perfect for a mealtime drink. But it seems you can also buy it online.

This is the spring version of the series based on the concept of the four seasons. I wanted to have it during the cherry blossom season, but it was not available. As the beautiful jacket says, it had a gentle sweetness and a fruity, refreshing taste. Next time will be in summer.

It sat on the shelf on the opposite door of the refrigerator, an origara that I had forgotten to drink. Perhaps that's why I only felt a little carbonation, but it was a fruity, refreshingly sweet drink that I never got tired of drinking. It seems to be a creamy soda for adults. I will try again.

We had this for dinner on a trip to Nara at an izakaya with a wide selection of local sake. The acidity was impressive when it was first sipped, but it quickly and cleanly disappeared. It has a strong umami taste, which I liked the most among all the sake I drank in Nara this time.

Akabu became my favorite, this time a Junmai Ginjo. The moment I drank it, I sensed a fresh fruitiness that was not unctuous. Of course, it has a strong umami flavor, but as a whole, it is an elegant and beautiful sake. I would recommend it to others with confidence.

I kept this San-do for New Year's. It was very satisfying with a pleasant gasiness, fruitiness and strong rice flavor. The pleasant gasiness, fruitiness, and strong rice flavor made it very satisfying. 13 degrees Celsius made it easy to drink up.

Sake to be exhibited at a sake fair by Juichi-Masamune. I got it for New Year's at a tasting at the University of Agriculture. It is hard to describe, but it is a very refined and elegant version of an ordinary sake. It was a good sake to start with.
