This sake is from Nara, where I have a connection with. It is easy to drink due to its slightly lower alcohol content, yet it has a strong sense of umami and sweetness.
It was so delicious. My wife was very satisfied with this bottle. The initial fragrance, the restrained yet firm fruitiness on the palate, and the umami of the rice.
It was a first prize recently.
Fruity, refreshing, sweet, and bitter, none of which are strong personalities, giving the impression of total elegance and high level of conditioning. It was served with sashimi.
Got it at a tasting at the University of Agriculture. It was my wife's guess. It was a true Muscat, with a strong white wine-like flavor.

I was so impressed with it after drinking it at the restaurant that I decided to drink it at home this time. I thought it was slightly carbonated, but the gas was so strong that I was surprised when I opened the bottle. The fruity and moderately sweet taste, combined with the low alcohol content and solid gas, was a nice touch.
Probably my first Toyo Bijin. I was surprised by its fruity aroma like muscat, while also feeling the mellowness of omachi. The price is moderate and the cost performance is excellent. I would recommend this sake to anyone.
Black Phoenix is a long time coming, and it started with the mellow, elegant flavor and acidity of Aizan, which became more pronounced as the sipping continued. The label is cool and I like it.
A slightly different type of wine that I purchased at the Agricultural University tasting.
It had a fresh acidity, probably due to the olive yeast.
I have another tasting today, so I will stock up again.
The rainy season has not yet ended and it is still this hot. This is the first summer sake of the year. It was a sake with a cool appearance, a light taste, and a strong umami flavor.
This sake is brewed with the family origins of Shorakuji Temple, which is said to be the birthplace of Japanese sake. It has a sense of the beginning of sake. (We also like Shimane.)
It has a light taste but strong acidity, and we had it with Nara pickles from the brewery.
