Sawaya Matsumoto was on my mind when I visited Kyoto. I have the impression that Kyoto's sake has a lighter taste and is more beautiful. Sake that has sweetness like Aizan, but with a clear, slightly effervescent taste and a good crispness.

Purchased on recommendation of liquor store owner. A gorgeous aroma, but a robust sake. The aroma is mellow and fragrant, different from that of a fruity sake. You can also taste the umami that is typical of Omachi. Delicious! I want to drink it after letting it sit for a while.

My favorite Houou Mita My first Heki-ban I bought it because it is a winter limited edition sake. Fresh type Aroma is weaker than expected Muscat-like freshness Sunlight seemed more mellow. I will rate it higher because it was more fragrant on the second day. Muscat, green apple type fruity sweetness -> sourness 4.5 stars

My favorite Isshuikusuisei! Junmai Ginjyo Nama-zake, which they ship immediately after bottling. I love this new sake series, and this year's is also very good! Mellow and fruity flavor! Might even taste better if you let it sit for a bit! I really like this brand! I want to compare again! 4.5

Kuheiji Junmai Daiginjo, cut down to 35%. Beautiful sake. It is more crisp than expected. It seems to go well with a meal. I've been drinking a lot of sweet sake lately, so it has a nice sharpness compared to other sakes. It's a refreshing sake, just like a daiginjo. It seems to be a clean sake with no cloying taste. The fruity taste is restrained. It seems to be better when it is back to room temperature than when it is too cold.

Eiko Fuji Sake Mirai Melon type sweet. Fruity. But it has a clean aftertaste and leaves a dry aftertaste. The sharpness may be typical of Eikoufuji. I've only had dry ones, so I didn't know Eikoufuji had such a fruity one. It has a nice sharpness, so it goes well with meals. I was surprised. 4

Sougen is popular among locals in Ishikawa People in Noto always call it Sougen (according to my friend). Sweet, sweet sake Not fruity, but with a sweetness that is typical of Ishikawa sake. It is delicious in its own way, but I realized again that I still prefer the crisp and fruity taste of Tohoku sake.
