Nara Sake
Kaze no Mori - Test Brewing Sake ver.3
This is an experimental sake from Kaze no Mori.
Daiginjos and such are polished to 50% or less to eliminate miscellaneous flavors, but this sake is made with almost unpolished rice from Nara Prefecture's Akitsuho, with a polishing ratio of 90%.
When poured into a glass, a slightly carbonated bubble appears and the aroma is sweet and sour and thick. In the mouth, it is not as sweet as the aroma, but it has a complex and deep taste that is typical of Kaze no Mori. The rich flavor is delicious even though it is not nigori sake. This sake was made on a trial basis for next year, and we are looking forward to the future.
