Fun to try wine yeast but I was absent minded. It was good but a little flat. I was hoping for a little more genki. But good acidity and not to fruity. Good with food.

Was really looking forward to this one. Unfortunately I found it a bit cloying and overly sweet in a somewhat artificial way.

Quite bold and full bodied. Highly aromatic. Not the easiest pairing, I would think it could go very well with chilled deserts, or also lovely on its own, slightly chilled, for a calm evening sip.

Another wonderful sake from Imada shuzo. Milled by the genki technique. It is vary fresh and slightly sparkling, with a lovely soft golden tint in the cup. It drinks a bit like a dry Riesling wine, in all the positive ways. A soft and easy pairing with a wide variety of foods.

A very well made and very well balanced sake. It pairs easily with a wide variety of foods. A bit towards the dryer side, with a lovely and slightly subdued fruitiness. It is all too easy to drink, be careful!

Not sure how I came home with this bottle, but I was happy^_^ It feels like a sake to be enjoyed on its own, or perfhaps with deeper vinegar and seaweed dishes, like sabazushi. A very slight sparkling quality, very fruity with a long, slightly bitter nose. Lovely deep color and a bit thick in the glass, better enjoyed in a bigger vessel.

Another lovely and playful taste from Imada Shuzo. Made from Hattanso rice polished to 70%. Its fresh and lively, with a pronounced acidity. Clear and light like water with a lovely sparkling shine to it. Very easy to drink, and like Imada aimed for, it pairs wonderfully with seafood.

Notes of Apple and Tangerine. Beautiful pale yellow and thick viscuosity. Very rich and fruity aroma, and a little spicy. After a couple of days in the fridge the sweetness becomes a bit too prominent. But lovely, unusual and fun to drink.

The memory of this sake still stays with me. To be honest, I wasn’t sure what to think after the first sip. But as I got accustomed to the taste it was truly something special. I don’t fully understand the process but the result is complicated and sophisticated at the same time. Notes of apple and maybe cantaloupe, unusual but amazing rice taste, striking balance between sweetness and acidity, and a very soft addition of wood. Perhaps best enjoyed chilled, on its very own. Absolutely wonderful!
