村長Rice: Yamaguchi Prefecture Rice Koji: Yamaguchi Prefecture Rice Polishing Ratio: 60% Alcohol Content: 17%. Today, it is a luxurious accompaniment to sushi. The sake itself has a very distinctive taste and goes well with the seafood, creating a synergistic effect. It was sweet, but not unpleasantly sweet, just right. If I had enjoyed it on its own, I might have felt it was a bit stale. It was a sake that went well with the meal.

村長Once-heated, alcohol content: 16 degrees, rice polishing ratio: 55%. It has a strong sake taste and is fruity, but I didn't feel it was that fruity. When I drank it, I could taste the melon flavor of shaved ice and sake lees in the aftertaste. I think it goes better with snacks, not meals. Kaki no tane and crackers didn't go well. There was almond. Western snacks such as cured ham and cheese might go well. If you put something on top of the cracker, it might have been good.

村長Limited edition of unpasteurized sake Rice: 74% Kame no o, 26% Aizan Rice polishing ratio: 55% Alcohol content: 16%, Sake degree: -2.0 The taste is fruity, refreshing and sweet. Slightly effervescent. Purchased at a local liquor store. I was told by the liquor store that it goes well with broiled eel, so I used it as an accompaniment to stone-roasted bibimbap on a hot plate, thinking it would go well with something with a strong flavor. The taste of the sake was not overpowered by the richness of the meal, and my mouth felt refreshed. It was quite a good marriage. I think it was not too sweet and more refreshing than Manzaku no Hana that I had drunk before. Very tasty!

It would also go well with Japanese food with a strong flavor. The class seems to have a deeper flavor if you drink it in a wine glass. It has a taste that can be challenged even by those who don't like sake that tastes like sake.

I chose fried ginkgo nuts and dried clams. This was a perfect match. I think of it as an after-dinner sake, the sake version of the espresso that finishes off an Italian meal. It was a spring sake, limited edition sake, priced at just under 1,700 yen.

村長This one was also tasted at Noboriya Sake Shop near Kinugawa Onsen Station in Tochigi Prefecture. The aroma is of melon. It's the driest of the three we tasted, and in my opinion, the most typical of all the sake.

村長This is also tasted at Noboriya Sake Shop near Kinugawa Onsen Station in Tochigi Prefecture. This sake was pressed on the morning of Risshun, February 3, 2021. The owner went to the brewery that day to purchase this precious sake. Risshun Asashibori is said to be a sake that makes the toji (brew master) work very hard, and because the sake is only pressed on Risshun Day, it requires perfect management to prevent the sake from being made too early or too late, based on the quality of the rice and changes in the climate. It seems to be a sake that makes the toji cry. It tastes fruity, smooth, and easy to drink. It is an easy to drink sake that you can drink easily. By the way, the word "Senkou" means a sacred bird or a precious bird.

村長I have always bought this for the last 3 years to drink every New Year's. It has a fruity taste that I like, and it's not that sweet. It's easy to drink. Recently, I don't drink it with meals, but just savor it. The price is still about 1,500 yen. The label is not a crescent moon, but a full moon, and once I bought the last bottle at a local liquor store and it was a full moon.
