Local Kurashiki sake. It is quite dry, or rather, the alcohol content is tight, and the acidity is strong. It has a wild taste and tastes like nambanzuke. It seems to go well with vinegared food and sashimi.
It's a sparing drink, and when I first drank it, I thought it was harshly carbonated, quite calpis-like, and milky (not my personal favorite), but maybe not what the maker intended, but the second day after opening the bottle, it was strangely mellower and tastier than the first day....
It has a full-bodied flavor, or perhaps it is the sense that the umami spreads slowly. After opening the bottle, put it in the refrigerator and drink it cold.

It is a very Japanese sake, and really mellow. It has a slightly sweet taste, not too assertive, and goes well with any New Year's dish.
