The flavor and miscellaneous? The way the accent of "umami" and "miscellaneous taste" remain on the tongue is just right. It may be the standard of good sake.
It is quite different from other Sentori. It was not the Omachi feeling I had imagined, but it seems that the ratio of Yamadanishiki and rice polished to different proportions, and I guess it is the taste of being a domaine and being particular about it, but personally, I was disappointed that it was not to my liking.
Low alcohol with a pleasant sweetness. Anyone can drink it easily. It has an element of dessert wine, but it is well-balanced enough to be served as a food wine as well.

I put it in there for 8 years to be with my daughter when she came of age, but I thought it might not be able to withstand the temperature changes for another 12 years. It's not easy to keep space in the fridge.
However, I was impressed by the yeast and the strength of the production.
I wondered if it could be aged without opening the bottle. I think it could have been matured without opening the bottle, but the mildness of the aging process and a little bit of a tangy taste makes me think it was time to open the bottle. Well, it's always a gamble when it's time to start aging, isn't it?
