Made from Goriki, a sake rice produced in Tottori Prefecture. Purchased at a sake brewery. A residential area in Kotoura Town, Tottori Prefecture. You can ask for it at the office and choose it in the reception room. They gave me a magnet as a free gift. It is quite powerful.

Gassan is brewed with super soft water, and the lack of gas certainly gives it a soft aftertaste. The softness is directly connected to the ease of drinking, making it a very easy to drink sake despite its 16% alcohol content. What a guy! Purchased at a sake brewery in Yasugi City, Shimane Prefecture. Yasugi City, Shimane Prefecture. You can get brewing water from a faucet on the premises. It is indeed very soft water. The brewery has a 300-year history, and its trademark was registered before that of Gassan in Tohoku. This sake is only available at the brewery and some special stores. Izumo?

Soft dry taste. Slightly sweet and numb aftertaste. Clean. What is this aroma? Aroma of rice fields? This sake is made from rice grown in Nouza, Yabu City, which is designated as a National Strategic Special Zone. I came home from Sanin and Yamaguchi. I was tired. On the way to Tottori, I bought this sake at Yamadaya, a sake shop in Yabu City, Hyogo Prefecture. I was curious about this store because of the sake trivia posted on Instagram (yamada8sake). The person in charge of the installer was off duty, but the owner was kind and knowledgeable. It was a great local sake store with a selection of Tajima sake and Ryu-ryoku. to be continued...

We saw the proprietress tasting the sake she had purchased in rapid succession, and ordered the one she recommended. And then, while we were drinking, we heard Lee Hak Hak Hak from another room. While we were drinking, the president of Li Bai came from another room and we had a chat with him. He brought his child with him. He will be at school tomorrow. After that, the tourism ambassador brought his business card. He gave me a discount coupon for Matsue Castle. I don't know what's going on anymore. Izumo soba is said to be a descendant of Shinshu soba.

Probably tastes better when heated. It is a bit like chocolate when paired with tofu chikuwa. Richness. The first day of our trip to the San-in region. We compared 4 kinds of sake at a bar in front of Tottori station. Tottori sake is interesting. The surume kouji is delicious.

I got this sake at the Junmai SAKE Week event held in Nagoya last month. It was great to see so many different kinds of sake from Hokkaido to Fukuoka. (The most delicious was the bonito flakes that came with the Shibotan sake.)

HONMOTO!!! The smell of ink. A twang in the nose. Slight fizz. A lingering aftertaste that is sharp but slightly sweet. Tongue is chattering. Bitterness from alcohol. Dry and dry. Uma. I can't get enough of it. 19 degrees! They say they are decreasing the amount year by year. Purchased at the brewery. This sake is only sold in one bottle. The first brewing was dry due to high temperature and early fermentation; the second brewing, to be released in December, will have a different flavor. It is distributed almost exclusively locally. Kiso-village has a lot of sake drinkers, so it is sold by the case. Wow. Photo 1 was taken when I bought it. The trophy from the Kanto Shinetsu Regional Taxation Bureau in the background is not posted on SNS because the reflection of the trophy would make me appear in the picture. It is really fun to learn a lot of things at a sake brewery.

When I mixed the cloudiness, the yogurt feeling was added and the green apple feeling was clean and refreshing. It's delicious this year, with a tongue-tightening sensation. He said he was thinking of assuming the name, but decided not to because of the difficulties involved in registering his family name and so on. It's a male name. The sake brewery has won many awards in the prefecture, nationally, and internationally, but it was worth going for a drink to feel close to the side of the family business that they are working hard on. Today was the first anniversary of the bar's opening, and I won a small bottle of sake in a raffle. I was so happy.

Miyasaka Brewery New Sake Festival 2025 is being held from 10:00 to 15:00. Lush cedar balls are nice and fresh. All-you-can-drink arabashiri and amazake from morning. The quintessence is Masumi. Purchased on 10/25 at the opening of the brewery. It is a special limited edition sake made from Koshihikari rice and aged in a cool place in the brewery. I also enjoyed the explanation of the sake by the toji (master brewer). It is an attractive sake brewery, but access by public transportation is a hurdle.

The end is a little bitter. The impression is very different from last year. This is the second year's new sake from Iraka Sake Brewery. It is only available at the brewery in Matsukawa Village for three days. There is only one more day left, tomorrow. This year, it was so prosperous that there was a line. Last year, I was the only customer when I went on the release day, but I am deeply moved to think that the taste and name recognition have spread that much in one year (old wig).

Numbness on the tongue. 20 degrees Celsius. Delicious. It is very interesting. This is a BY2017 sake matured in the attic of the miso warehouse at Matsubaya Honten. When you say so, you can feel the aroma of miso. Izakaya in front of Nagano Station. It violates everything on the label, which says to keep it at room temperature and heat it up, but the owner is on good terms with the brewery and has reported it to the IRS, so no problem. The owner's knowledge of sake and the proprietress' exquisite customer service made this a very nice place. No reception.

Purchased at 7-Eleven Maruko Wako on the way back from 10/25 from Takeju Shuzo to Otsuka Shuzo. This convenience store is located at the junction of Ueda and Saku after passing through the Sanzaiyama Tunnel. It has a large selection of sake from Shinshu breweries. I found a good store. I sometimes see Meiho, but this was the first time I saw Shuho, so I bought it. It's really good. Shinshu Meiho gave me a stamp of "Shuhou" in country tourism, which made me very happy. I was so happy to get a stamp of "Shu" at Shinshu Meiho. Correction. The correct name is "Mei" Mine Kikumori. I am not in a position to be blamed for the typo, I regret it.

Preliminary study because I supported a project to release new hard water and soft water sakes through Kurafan. They use hard water for all the sake they sell now, but they used to use soft water called Benten-no-shimizu for their honjozo. He said they stopped using it because it was too hard to go fetch it. I wanted to drink it. So I went to fetch some. It was about a 5-minute drive from the brewery. The water was flowing out at a great rate and was soft and tasty.

The splendid house along the old Nakasendo road is a cultural asset. Fresh amazake was served, tastings were available for a fee, and collaborative products from Summer Wars were sold. The toji explained about the products. He told us that he takes a lot of time and effort to make the Twelve Roku using box malted rice. It tastes even better now that we know how much we appreciate it.
