Soft citrus aroma. Slightly sweet. Spreads on the tongue and has no habits at all. Soaks in. A high and tasty one. A high-class sake made with rice from Tomi in cooperation with Daishinshu and Horyomon. Super expensive. Furthermore, the plum wine made by Assumption became the best in Japan last year. Furthermore, there is also a sake called "Sake without Assumption," which is twice as expensive as this one, but it is actually the same sake, made from a different pressing lot, and is said to be particularly delicious. What an amazing world! Dai-Shinshu no Kurabiraki - Love Thanksgiving - 2025 5/25 11:00 ~15:00 Tickets are a bit expensive, but it's understandable since it's both a food event and a festival. major design A sweet, apple-scented sake. It is not a typical Daisetsukei sake, but I like it. Directly pumped from the limited server during the brewery opening. It is fresh and crisp. I think it goes well with Sanzokuyaki. Azumino Ikeda-machi Sake Brewery Festival 2025 5/24 10:00-16:00 Daisukei and Fukugen in Ikeda-machi opened their breweries for the first time in 6 years. The Daisetsueki venue was very lively with a live performance by a singer from Nagano Prefecture and many oily stalls. The brewery tours were good with quite professional explanations. There were 14(!) free tastings and 7 paid tastings. It is interesting that the more expensive the tasting is, the more delicious it is. The fresh amazake (sweet sake) that they serve is delicious. I'm sure there are some people who went to the same event as the Kamidori brewery opening, but I couldn't make it.

A sake brewery that specializes in aged sake. They also mature sake lees and sell them to the trade. Azumino Ikeda-machi Sake Brewery Festival 2025 5/24 10:00-16:00 Daisetsuken and Fukugen in Ikeda-machi open their breweries for the first time in 6 years. The Fukugen venue will have 5 tastings for 1500 yen. otona atmosphere with live JAZZY music. Many local snack stalls were open. Delicious sakekasu sponge cake. Fun.

AND double Smells like caramel. Sour. Sweet. Slightly tingling. Impression like candy. And it smells like a sake brewery. I often see sake made with wine yeast these days, but this is delicious (my favorite). This is Kitayasu Brewery's recommended sake. Purchased at a sake shop. It was indeed a prosperous store.

bragging about one's success at the end of a long road Fresh grapefruit-like aroma and bitterness. Slightly effervescent and tangy. Aroma of rice and smoky aroma in the depths. Dry and easy to drink. Purchased at a liquor store in Oami, Chiba. I went to the sake brewery during GW, but they were sold out of Matsuo Boast. As one would expect. I was told of a liquor store that "sells it if it's still available," and I bought it without incident. The Kujukurihama beach was windy and the waves were high.

This is the third prize for achieving SAKE country tourism. I bought a bottle of Chiba sake even though there was still some left, so my fridge is feeling very overwhelmed. Shiga Izumi Sake Brewery Delicious good. Apple aroma. Sweet and delicious with fruity and juicy acidity. Slightly effervescent and lively. Slight bitterness. It's refreshing and crisp. Umeyuee. I like it. Purchased at Zenkojiya Sake Brewery, a liquor store in Nakano City. It is located between Marusei Sake Brewery and Igaya Sake Brewery. If you are not driving, you can taste it. I bought it for myself while I went to buy the hottest souvenir of Nagano Prefecture, "Tsuki no Usagi no Unko" (a rabbit of the moon). Next time, I would like to buy Shigaizumi as a souvenir.

ume (plum) unripe plum blossoms boiled in soy sauce with mirin Delicious. Sweet aroma of grape type + yogurt. Numb but soft on the tongue. The flavor is strong, yet not cloying. Purchased at Mikiya, a direct sales store near Umeichirin Sake Brewery. They sell Ume-Ichirin sake, sake cups, and other goods, but they also sell boxed lunches and other items, just like a convenience store. I bought this one, which had a pop-up sign saying it was the most popular. I found out about this place at a bar in Matsumoto the other day, and since it is a sake brewery in Kujukuri, I went there since it was the GW season and Kangiku was close by. The back of Cheeba-kun's head. Umeichirin Sake Brewery is doing quite well for a local sake and is expanding nationwide. I heard from another nearby sake brewery (Moriya Sake Brewery) that they are expanding their business nationwide.

The last two Daiginjos received from Maihime were compared. 12 Shinshu Maihime Junmai Daiginjyo Harasake Miyamanishiki Sweet aroma like pear. Slightly dry, a little astringent and acidic, and crisp. Slight numbness on the tongue. Slight numbness on the tongue, with a hint of bitterness at the end. 13 Shinshu Maihime Junmai Daiginjyo Oufu Nakadori Harazake Apple aroma. Sweet, soft, and slightly fizzy on the tongue. The aroma is very good. So-called "good sake" taste. The label made of Japanese paper gives it a luxurious feel. I was surprised when I checked the price. I was thrilled. We are currently exploring izakaya in front of Matsumoto station. However, the cost is very expensive, so we are trying to keep it moderate. It is a very small restaurant located along the Otowa River. It is full of regular customers, but it is a very nice restaurant that creates a comfortable atmosphere even for first-time customers. I was surprised at the leek balls. They have a wide selection of sakes that you don't see in the Matsumoto area, which is very appealing. The sake offered in the set of three different kinds of sake was Izumo Fuji, Izumo Izumi, and Gokeijo. I don't know all of them.

When cooled, it has a habit of lactic acidity and aged aroma. Warmed. The nose has a woody, savory aroma. It has a fruity and gentle sweetness as well as a sense of rice. A little sour. Numb, sharp and delicious. 15 Chouji Junmai Ginjo Kinmon Nishiki Ajiginjo Slightly pear aroma. Ume. Soft, subtle sweetness and a refreshing citrus-like feeling. A little bitterness at the end. It has been a year since it was made, but I think it's good. The sake is named "Shigetu" after the sake brewer Takeshige and the toji Shigeta. The toji explained this to us when he opened the brewery in the past. SAKE Country Tourism Achievement Prizes. The third prize is from the Takeju Sake Brewery in Saku. It is one of my personal favorite sake breweries. The second batch of sake still remains, so the pressure in the refrigerator was tremendous. The following will be posted separately. Catskill Little aroma, slight solvent aroma. Slightly piquant. Dry in the mouth. Overall, it is clean and refreshing. It could use a little more flavor, but that's okay. Obtained through crowdfunding. This is an American SAKE that came to Japan through a partnership with Hakkaisan. It does not taste strange at all, and is as good as Japanese Sake. If this is the case, is there any reason other than the rarity of choosing an American SAKE to drink in Japan? Price-wise.

Kurihara (Kyoto and Osaka) A faint, subtle candy aroma. Clean and light. Mmmm... Shinshu Kiso-cho Spring Brewery Opening on 4/19. KURIHARA is named after the founder, Mr. Kurihara. Tasting sake while listening to the toji, who is like a comical storyteller, talk about his experiences is a special experience. The lovely label was painted by the toji's wife.

waterway 10 Suiro Junmai Ginjo Natural Made with environmentally friendly rice produced in Omi Village, Shinshu Aroma of pear or melon. Sweet, sour and juicy. Numbness on the lips. Refreshing. Delicious with a beautiful taste. 11 Takao no Tengu Junmai Ginjo Aroma like pear. Sweet and sour. Contrary to the austere label, it has a freshness that caught me by surprise. I like it a lot. It is made with rice from Hachioji, where the brewery had a connection with about 10 years ago through various circumstances. The second prize for achieving SAKE country tourism is Maihime from Suwa. It was a crazy project in which, after collecting stamps from 70 breweries in Nagano Prefecture, 18 bottles were delivered as prizes, 6 from each of 3 random breweries. For some reason, we received 7 bottles. The aroma and taste are strong and tantalizing. Not too sweet and not too dry. It would be good if it were named something like "Nantoka". 8 Suiroku Ginjo-shu Super dry The red label of the second photo on the left. It has a cool apple aroma. It has a moderate numbness and sharpness. Slight bitterness. Good dry taste. 10 Suiro Junmai Daiginjo Miyamanishiki Nakakumi Nama-shu, Polishing 49 The right side of the picture is marked in red. It is polished to 49%, so you would expect it to be light, but it has a very strong flavor. The aroma is like a melon. Slightly foamy and numb. Rhizopogon rubescens (species of edible mushroom) Aroma is quite fragrant, as is typical of old sake. I like it. Woody aroma and flavor. Numbness on the tongue. The astringency and acidity left on the palate makes it even better with snacks. It's a great taste for a great price. Amazing. It was a new experience for me. Purchased at a sake brewery in January. Koka City, Shiga Prefecture. It has a cafe and a store and was crowded with regular customers. Shiga Prefecture's famous popping-out boy is a ninja in Koka City.

biwacho Yellow. A fresh aroma like some kind of gum passes through the nose, and there is also the aroma of rice. The taste is delicious. It is light and refreshing. When you drink it, your tongue feels a bit irritated. A little astringency. It's delicious. The cherry blossoms on the bottle are lovely. It was purchased at a sake brewery in January. Takashima City, on the west side of Lake Biwa, is a fishing port or an area where fishmongers are flourishing. I thought it would be too early to see cherry blossoms, but it turned out to be a good time.

common squid (Todarodes pacificus) It has a citrusy aroma. Soft mouthfeel, acidity, and a hint of sweetness. Fruity, but with a strong aroma of rice in the depths. It is good. It is delicious. Quite to my liking. We bought it at a liquor store in Niigata City. I went to the Niigata Sake-no-Taien (Sake Festival). While enjoying a bottle of Hi-iri Ichijozo Junmai at the Koshi Meijo booth, I asked about the special feature of this sake, which is that it is named "domaine ikazuchi" and is made from local rice. Nagaoka? I was surprised to hear that it is made with local rice. I have no good photos because they are blurry, so I'll add photos of the trip to and from Toki Messe. Note that typing in "Sake no Wani Ichibrew" will associate it with a liquor store.

modern-style room Sweet aroma. Like candy. Very slight effervescence. Aroma of rice. Sourness and umami come in jabba-jabba. It's so good, it's so good. Purchased at a sake shop. The Imanishiki Tadpole Series is a limited edition sake made only from rice grown in the terraced rice fields near the brewery (worth a visit). Each season, the sake is released with different levels of maturity and with hind legs and front legs. This sake was purchased last month and is about to grow legs.

three famous ancient calligraphers: Emperor Saga and Tachibana (no) Nama sake is slightly effervescent. The aroma is fruity or floral. It has a sweetness. Surprisingly dry and dry. It has a light impression with a slight bitterness and numbness at the end. Slightly effervescent when heated. The aroma of rice and softness is relatively dry and light. I think I like this one better because it has more umami. Obtained through crowdfunding. This is a new brand from Misuzu Shuzo. It's a new low alcohol challenge for the sake brewery, and since it's from Matsumotohira, we have no choice but to support it.
