It has been a long time since I was able to buy a brewed forest. I can't get enough of the slightly carbonated, shwashy feeling. It is fruity and makes me wish there was a genre of rice champagne. It is as delicious as ever!

The aroma is exciting from the start, like a combination of pineapple and apple. After enjoying the aroma, it seems to be quite dry thanks to the 16% alcohol content. Today I served cucumber sticks with mayo miso as a snack, and it was a great match and made the sake go down a treat.

Immediately after the bottle was opened, the taste was sweet, followed by a strong sourness, which I did not like, but the subsequent change in taste swung it in the direction I liked, and after 5 days the sourness had almost disappeared and it became sweet, tasty, and refreshing to my taste. I am always interested in sake made from Sake Mirai, a sake rice developed by Takagi Shuzo, the brewer of Jyushiyo. This time, for the first time, I was able to try Sake Mirai made from Ichibakusuisei rice. What was it like? It was somewhat different from the Sake Mirai I have had in the past. The aroma and sweetness are moderate, but after the umami of the rice, you can taste the acidity and the aftertaste disappears nicely. There is not much change in taste after opening the bottle.
