It has a fresh taste that can only be obtained from unpasteurized sake, but it is quite bitter when it is cold. The balance is better when the temperature is slightly higher.

The Kazuma Sake Brewery was severely damaged by the Noto Peninsula earthquake. Nevertheless, they have not stopped their steps toward recovery, and we are very happy to be able to taste "Takeba" again this New Year's.
If you pour only the supernatant, you can enjoy the slight effervescence, and if you swirl it around, you can enjoy the sweetness and rice flavor, which is a very nice touch.

After visiting a sake brewery there, I had it bottled and purchased at the "December Appreciation Day" weigh-in corner. It has a pear-like aroma with a tangy yeast flavor and a slightly bitter aftertaste. It tastes just like it was freshly pumped.

After visiting the brewery, we had the sake bottled and purchased at the "December Appreciation Day" corner. The brewery uses cedar chips to fill the barrels, which gives the sake a strong cedar aroma and a hint of sweetness, just like you would taste in a square.

Aomori beef grilled on a ceramic plate
I tasted several kinds of Momokawa at the Aomori Fair held at Town Seven and bought "Junmai Shinshu Hatsushibori" (Junmai new sake). I was told that they also offer sake brewery tours, which I would love to do.
I chilled it lightly and opened the bottle immediately. The water used seems to be good, and the clear mouthfeel is pleasant, followed by a refined dryness and sharpness. I think it is the best sake for a mealtime drink. The taste is excellent for the price.

The bottle was opened after being stored in a sake cellar (-5℃) since last November. After the yeast that is typical of nama-zake is felt, a robust grain-based impact comes, so I want to enjoy it little by little.
