Aomori beef grilled on a ceramic plate
I tasted several kinds of Momokawa at the Aomori Fair held at Town Seven and bought "Junmai Shinshu Hatsushibori" (Junmai new sake). I was told that they also offer sake brewery tours, which I would love to do.
I chilled it lightly and opened the bottle immediately. The water used seems to be good, and the clear mouthfeel is pleasant, followed by a refined dryness and sharpness. I think it is the best sake for a mealtime drink. The taste is excellent for the price.

The bottle was opened after being stored in a sake cellar (-5℃) since last November. After the yeast that is typical of nama-zake is felt, a robust grain-based impact comes, so I want to enjoy it little by little.

(2) Purchased three years ago and stored in a sake cellar (-5 degrees Celsius)
(1) was dry with a nice aroma and a high acidity, but a little bit of a tangy taste was bothersome. (2) has transformed into a smooth dry sake with a moderate aroma, and is interesting because it seems to be a step up in quality.

Crowdfunding return gift. This Junmai sake is named after Sanemori Saito, a Heike warlord in the Genpei wars, who is associated with Kaga City. It is quite sharp and dry, but to be honest, it is not my favorite.
