Daigokujojo Banshu Yamadanishiki The aroma is faintly fruity, and when you put it in your mouth, it is soft to the touch, and the flavor of the rice and a slight sweetness spreads, but there is some acidity and bitterness in the latter half, and I think the overall taste is well balanced and elegant. I drank it after the perfect Nanadaru Nijukan, so if I drank it only here, the taste and feeling might have changed more.

Nanadaru Nijukan Junmai Daiginjo Namazume This is the first time I drank Jyushiyo. As soon as you put it in your mouth, the elegant fruity aroma spreads, and the elegant sweetness makes you feel the umami taste, and it disappears quickly. I think it is a perfect sake.

Honjikomi Special Honjozo The specification is 55% polished rice and it is a special Honjozo or Ginjo class. The aroma is subdued and not very assertive, but the balance of the pungency of the sake and the acidity that lingers afterwards is clear without any miscellaneous flavors, making it the ultimate dry sake.

Junmai Daiginjo Toyoupai Rice Raw Sake Rainbow The aroma is a gorgeous ginjo scent, and in the mouth you can feel the concentrated flavor of the Toyopai rice in the fresh tasting sweetness. The aftertaste is clean and refreshing with a bit of bitterness and sweetness.

Junmai Daiginjo Hachitanshiki The fruity aroma of the Hanayo-yoku series that I have drunk so far was weaker and calmer. The sweetness and acidity of the usual pineapple-like fruity taste were weak, and the astringent and bitter tastes were strong. The aftertaste also had a strong alu feeling and spiciness. I drank it at the store, so maybe the eggy taste became stronger after the bottle was opened for a long time.

It has a different taste from Junmai Ginjo, and I personally prefer this one. It becomes mellower and tastier after the second day than when the bottle is opened.

Junmai Ginjo Kouki (Raw Sake) It has a fruity sweet aroma with a rich sweetness and rice flavor, but it soon becomes slightly sour. There is a slight spiciness in the aftertaste and a pleasant crisp aftertaste. Three days after opening the bottle, the sweetness has almost disappeared, the spiciness has become stronger and the astringency has appeared.

Organic Naturals 2020 This sake is brewed using a very ancient method using Kame-no-o, wooden vat brewing, native-production yeast and brewer's yeast. It has a slightly sour aroma with a moderate sweetness, and the taste is mainly sour and bitter. You can also feel the astringent taste of the barrel, but overall, it is a refreshing and easy to drink sake.

You can feel some astringency afterwards, but it is a very easy to drink sake with a clear taste. You can also enjoy the taste of the wooden vat brewing method of the natural yeast.

New Year Junmai Shiboritate Raw Sake 2021 NEW YEAR'S DAY SPECIAL BREW 100% Akitashakekomachi, 60% polished rice, 13% alcohol It has a strong gaseous aroma and taste that is very typical of Shinsei. It is more fresh than other Shinsei sakes, with less sweetness and some gentle acidity.

VINTAGE 2018 Junmai Daiginjo Akita Sakekomachi This is an aged sake brewed in 2018. It has a calm aroma, a delicious flavor typical of Kamonishiki with a moderately aged depth, and a taste with fullness and depth.
