Polishing ratio 60 Alcohol 15 Light and tastes like the label. Differentiation from current sake quality? 8/23 Surprised when paired with bonito tataki. The light and clean taste is the best match for the ministry. My apologies. I felt the ultimate food sake and understood why Kochi sake is dry 😭

Polishing ratio 60 Omachi Alcohol 16 This is completely different from the 85% polished rice. If the rice polishing ratio makes such a difference, the experiment was a success. It is easy to drink without the robustness of the 85%, but the umami of the rice can be felt well. As indicated by the -1.7 sake meter, the sweetness is strong. (The 40% rice polishing ratio is -4.4 on the sake meter, so it may be even sweeter.

Polishing ratio 85 Omachi Alcohol 16 The combination of the sake yeast and Omachi gives it a strong umami flavor. It does not seem like 85% polished rice at all. I think it was a good experiment to use 85% instead of 80%. Experimental sake with 60% and 40% rice polishing ratio is also promising.

Polishing ratio 50%. Omachi Alcohol 16 It has a slight shwashiness and a good balance of sweetness, spiciness, and acidity. The aroma is mild. There is no bitterness, and it tastes great right after opening the bottle. The change in flavor with refrigeration is also an enjoyable experience.

Polishing ratio 60 Yamadanishiki produced in Hyogo Prefecture Alcohol 16 It is fresh and has a great "shwashuwa" sensation. The balance of sweetness and spiciness is perfect. The difference from Hakuisen (in terms of maturity and sake quality?) can be clearly seen and the thoughts of the master brewer can be understood. You can understand the difference between this sake and Hakuizumi's and get to know the thoughts of the master brewer. I look forward to seeing the changes in taste as it is stored under refrigeration.

Rice polishing ratio 60%, alcohol 16 This sake is so beautiful that it seems to be a Junmai Daiginjo. It is very tasty with a slight sweetness. The protein reduction effect of 60% flat milled rice = 40% spherical milled rice is well expressed. I was surprised when I tried a sake with 80% polished rice, but I was even more surprised than that. I highly recommend it❗.

There is no spiciness. I am looking forward to the change in refrigeration. 6/4 Once the schwashiness is gone, the sweetness and umami can be sensed, making it even tastier.
