Saijo version. First time drinking. The image of Abe Obama is still strong. It has a smooth texture on the tongue and is free of any impurities, which is typical of daiginjos. The sweetness and spiciness is just a little bit sweet. It is not sharp. It is not sharp, nor does it have a noisy aftertaste. This is a sake that can be enjoyed with such comfort all the time.

Saijo version. Skimpy dry sake with a delicious flavor. Sake to be drunk with no tension. I like it. I wish the time would come when this kind of sake would be accepted by the young people of today. LOL!

Local sake in Saijo, Higashi-Hiroshima, the sake capital of Japan. It has a full-bodied taste, but it is not sluggish and has a smooth aftertaste. Not too sweet and not too spicy. 14% alcohol by volume. Just right. This is what it means. You can drink it with a meal and find yourself tongue-tied. LOL! It was my first time to drink it, but it is a candidate for evening drink.

I recently purchased this sake at a brewery in Ibaraki. It was my first time seeing and tasting this sake, but I had a good encounter with a light, dry sake of my liking, which I think is a result of the characteristics of No. 10 yeast and the raw water. I tasted a honjozo and a daiginjo at the brewery, but this junmai is the one I buy for home. It is a dry sake with a nice taste, and it is a perfect food sake. Where is the nearest store that carries this sake?

A series of souvenirs of business trips by friends. Dry taste that you will never get tired of drinking. The flavor and color are typical of junmai. The ginjo aroma, which is typical of low-temperature fermentation, and the pure rice flavor coexist. and pure rice flavor. It is delicious.

As an intermediate wine drinker, I have an image of sparkling sake as being sticky and sweet, and even if not, the weight of the raw sake stands out and makes it difficult to drink, but this sake seems to dispel that image. The attack has a moderate umami of rice that is not too assertive, and from there it quickly finishes. It is elegant and dry. A perfect match for today's smoked salmon spring rolls.

The brand that won the gold medal at the National New Sake Competition on the same day. When you put it in your mouth, the elegant and gentle sweetness spreads, and the sharpness of the alcohol gradually takes effect. There are no hints of miscellaneous flavors. I have always preferred to drink dry sake on the + side (the higher the better), but this was an opportunity for me to broaden my horizons.

The first taste is plump and umami, but the aftertaste is crisp and clean without any cloying taste. A fine food sake. As it is a 2019BY, it has a sense of maturity, so it will probably go well with any dishes with dark or light flavors. Tonight we had meaty beef with a garlic sauce. It has a nice presence that enhances the flavor of the meat without erasing it.

I was curious about this brand because I often hear about it, so I bought it for the first time. It has a characteristic acidity and a soft, light, tight body.

+I was curious to buy it because I like dry junmai over +5. Today is Mother's Day, so we had hand-rolled sushi. I don't like the feeling of a crisp, clean, albeit a bit dry, Junmai for Sashimi. I don't like the feeling of "I'm not a fan of that", so I went for the Dai-Sara Junmai right away! The first sip gives a mild umami flavor typical of junmai, but as it goes down the throat, it finishes clean and crisp. +If it goes up to +15, it seems too spicy, but this one seems to be +12. I think it is just right. It went well with scallops, which are light and tasty among today's ingredients.

It has no unnecessary aroma, and its acidity is exactly the perfect food wine. It goes well with sweet and sour flavors. Asparagus wrapped with meat tonight. Oh, my goodness..............................

Purchased at a brewery in the town of Koshu, famous for its ume (plum) groves, where I stopped by on business. It is a good sake that is not too assertive from the start, but has a pleasant umami flavor.

Junmai. The aroma is mild and dry with a smooth yet mild umami flavor. The lingering acidity stimulates the appetite.

It was my first time drinking it, but I had high expectations given its name recognition and label. As a result, I found it to be ripe, delicious, and spicy, which I love... I saw some Yamahai at a liquor store, so I'd like to try it next time.

Souvenir of a friend's business trip. Light nigori. There are many types of nigori, such as light and dark, with or without gas, sweet and spicy, etc. This one is smooth, spicy, and easy to get used to, This one is smooth, spicy, and easy to get used to.

A business trip gift from a friend. Beautiful and ripe flavor. No extra aroma. Great sake. I didn't expect such a good sake. It's a good sake that is just like a food sake.

Second purchase. It is fresh and has a perfect balance of sweetness and sourness. It is a brand that dispelled the impression that the sweetness of white malted rice would stand out if it were not used properly. As a person who knows wine to some extent (and as a white wine lover), it is very approachable. Above all, it lowers the threshold of sake in a good way, and I hope many people will try it. It is best to drink it with a glass of wine.

A gift. It was my first drink of a brand I was curious about because I like aged sake. It is an old sake. But I think it is different from just aged sake. It has a taste and a lingering aftertaste. It is a genre that will broaden your enjoyment of food if you get into it, although it is not for everyone.
