As an intermediate wine drinker, I have an image of sparkling sake as being sticky and sweet, and even if not, the weight of the raw sake stands out and makes it difficult to drink, but this sake seems to dispel that image.
The attack has a moderate umami of rice that is not too assertive, and from there it quickly finishes. It is elegant and dry.
A perfect match for today's smoked salmon spring rolls.
