Yamadanishiki Polishing ratio 80 I wondered what it would be like at 80%, but it was very easy to drink and delicious...! The richness of the rice flavor and the raw sake feel are too well balanced. Easy to recommend 🙆‍♀️ stable Kido!

Gohyakumangoku from Fukui Prefecture 50% Koji rice, 65% Kake rice The quality of the sake is light, with a fruity green apple flavor and a dry, crisp taste. It is a super all-purpose type that goes with everything. It is a very versatile sake that can be enjoyed by men and women of all ages. It went down well!

Comet Polishing ratio 50%. It is juicy with a delicious mouthfeel, coexisting with a fleshy sweetness and a chilliness of acidity. The sweet and sour taste and the bottle color give it a strawberry feel 🍓. The bitterness and aftertaste are gentle and unctuous, so even though it is sweet, it is easy to drink and delicious! It is quite sweet, so it is more difficult to pair with meals.

Gohyakumangoku from Fukui Prefecture, Polishing ratio 50%. The bottle was opened after 10 months. It is a must for those who love bubbles. It has a fruity, grapefruity taste with just the right amount of bitterness, which is unique to ori (ori). Easy to drink and with a clean aftertaste, it's more of a toast than a dessert. 100 points. I wonder how it would be different if the bottle had been opened immediately...

Polishing ratio 60 The aroma is clear and reserved, but the fragrance is Hagi no Dew. It is fruity with acidity. The aftertaste is bitter. The mouthfeel is gentle, so it is easy to drink too much of it. It may be defeated by a strong meal.

Gohyakumangoku Polishing ratio 60 It is super dry and has a mineral taste. The taste is creamy with a strong umami of rice, and the lingering aftertaste is acidic and sharp, making it a strange dry sake. It is a delicious sake that is very drinkable and makes you want to have another glass.

Kura-no-Hana, Miyamanishiki, Gin-no-Iroha, etc. (blend of 4 types of sake) Average rice polishing ratio 60 It was a gift. I think it was left a little too long so it doesn't taste right 😭. This is my first blended sake and I don't find it as complex as I imagined it would be. It has a full-bodied rice flavor and a slight thickening. However, it has a dry and rich aftertaste. I have the impression that it is a classical sake made easy to drink! The bottle is just lovely.

Yamadanishiki produced in Shimane Prefecture, Polishing ratio 70%. The mouthfeel is light and mild, so it comes in easily. It has a pleasant lingering aftertaste with bitterness and complexity in the second half. When paired with a meal, its complexity is just right and it is easy to drink. 🙆‍♀️

Organic Kame-no-o from Tochigi prefecture, 90% polished rice Although it is a noble sake, it is easy to drink! It has a mild sweetness, a gorgeous acidity typical of Senkou, and a clean finish that is not too heavy. It was a sake that made me feel that it is full of natural flavor.

Yamadanishiki Polishing ratio 65 Sweet and acidic, but the bitterness in the second half is stronger than the acidity, like grapefruit. The fruity and complex flavors are interesting and unique. ☺️ It's a nice unpasteurized sake, dark but not heavy. I prefer it to Gojugo. Delicious!

Yamadanishiki, Polishing ratio undisclosed The bottle was opened after it had been laid down for a while since purchase. The moment I took off the cap, the cork blew out... It has a modern feel with a sense of gas from fermentation, a rich umami and a gorgeous sweetness of rice! It's not too harsh when drunk chilled, but very tasty. ☺️ The crisp acidity becomes more noticeable as the temperature rises. I think I let it sit for too long.

Yamadanishiki Polishing ratio 60 Refreshing and delicious! The bitterness is weak, the sweetness of the rice is moderate, and the acidity is smooth and well balanced. Although it is a light, refreshing sake, it has a presence that is not overpowered by food, making it an excellent choice as a mealtime sake. I especially like it as a first drink. It is more mellow when it has been aged than when it is freshly opened.

Kake rice: Yamadanishiki (Hyogo), Polishing ratio 50%. Koji rice: Gohyakumangoku (Ishikawa), Polishing ratio 60 The aroma is softly ginjo. It has a crisp and spicy taste with a long lingering flavor. The depth of flavor increases when the temperature is slightly higher. Personally, it is best served cold. It has a gorgeous dry taste and is great as a food sake.

Matsuyama Mitsui Polishing ratio 55 We had this at the recommendation of the waitress. It is too delicious with strong umami! It has bitterness and sharpness, and the inside of the mouth is happy with the umami. It has a freshness and modernity to it. It is easy to drink with a low sweetness, just the way we like it 🤗It can be drunk like a dry shochu high (dangerous).
