Today was the pre-show for my daughter's coming-of-age ceremony. I was looking forward to drinking it on this day♪ Raifuku Sparkling. I think the name of the wine is perfect for this day. We were blessed with good weather and it turned out to be a very nice anniversary! The carbon dioxide gas that spreads in the mouth gives it a refreshing taste. It retains just the right amount of the rice's natural sweetness, with a crisp, gassy aftertaste. My wife and I are enjoying it while reminiscing about our grown children.

A while ago, my sake-loving boss and I were talking about "Morishima" and how there are no stores around me that carry it. Yesterday, my boss surprised me with a bottle of "Morishima" and said, "I'm about to drink it, but I'm going to give it to you. I'm so happy! I'm so happy. ‼︎ It was my first "Morishima". I had it right away. It is a junmai daiginjo brewed with "Comet", a rice suitable for sake brewing produced in Hokkaido. It has an elegant ginjo aroma that spreads softly, and a perfect balance of light umami and acidity. The gentle, soft sweetness and moderate acidity are pleasantly crisp and delicious. I found another new delicious sake. ‼︎

It is a Junmai Daiginjo from NOBU, a restaurant spread all over the world. It has a gorgeous fruity sweetness. The umami and acidity are mild and complement the sweetness. The sweetness disappears quickly in the aftertaste, leaving a slight bitterness.

I'm working on New Year's Eve, so I guess this is my last drink of the year. It has a perfect balance of freshness, minerality, aroma, acidity, umami and sharpness. The aroma of mild koji and a hint of gasiness that enhances the sweetness. I am enjoying it with my son who came back home while watching "Ametalk".

My favorite brand "Saku". Purchased at the liquor corner attached to a local home improvement center. I visit this favorite place every day when I find free time. I found a bottle there. It is a limited edition sake made with rare rice "Aizan" that is only available once a year. It has a gorgeous aroma and a crisp taste. It has a delicious taste that will not betray you. Best ‼︎

This is one of my favorite brands. I was very weak to the claim of "limited sale," so I bought it without hesitation. Elegant and pleasant aroma. Very soft on the palate. The original umami of rice spreading smoothly is beautifully balanced with gradually perceptible acidity, light sweetness, and light bitterness. It has a sharpness that makes it easy to drink. The rice is made from Kami no Ho, a variety of sake rice named after the delicious sake rice born in Mie, the land of the gods. I found myself falling for the charm of "Saku" all over again.

A superb ginjo-shu made from a fantastic rice suitable for sake brewing, "Tansokutobune". Polished to 35%, the rice has a fresh, fruity aroma and a refreshing taste. The sweet and refreshing ginjo aroma and rich rice flavor make this the best Watarifune sake. It is a refined sake overall with a firm sharpness. This is delicious. ‼︎
