I started drinking this year's sake today because I was working all through the year-end and New Year's holidays and also because I caught a cold and had to refrain from drinking. It has a moderate refreshing aroma, a clear and sharp flavor, and a nice sharp aftertaste. I am enjoying it with Matsumae pickles my wife made for me.

I am not a special Gundam lover, but as a "Saku" lover, I was curious to find out that there is apparently a sake called "Sha". The other day I found it in the liquor section of my favorite home improvement center and bought it. It has a full aroma and a broad flavor. It has a crisp, clean taste that cuts through easily, and a light, refreshing mouthfeel. It went well with my favorite salted fish. I found another delicious sake.

This week we have our wedding anniversary. My wife and I are finally celebrating our silver wedding anniversary. Since I couldn't take a day off from work on the day of our anniversary, we celebrated a little early. On this memorable day, we toasted with "Brilliant" which we purchased on our anniversary trip a little early. The aroma was gorgeous, and when you put it in your mouth, you could feel a soft sweetness, a nice astringency and bitterness, a moderate acidity, and a well-balanced spread in your mouth, and you could enjoy the lingering, full flavor. Kami, keep up the good work. ❤️

When the weather gets hotter and hotter, I can't help but flirt with schnitzel-type beverages. But today I really wanted to drink some sake, so I opened my favorite brand, Saku. It was delicious! I am reminded that the heat during the day has nothing to do with good sake. Tomorrow is my day off, so I'm going to relax and enjoy this sake tonight.

It's been a while since I've had a Saturday off, so my wife and I are having dinner. The aroma is fresh and fruity. The aroma is somewhat fruity like melon, and the color is pleasant. It has a soft sweetness and umami taste that I like. I have a colleague at work who is addicted to Koryu, and I think I understand why.

I was working during GW. I wanted to have a drink after GW, but I had been so busy that I had run out of my stock of alcohol. I really wanted to drink it today, so I just now (21:00) bought it at a nearby drugstore. I was surprised at the price for a Daiginjo. I can't taste its characteristic flavor, but I think it is cosy enough for drinking at home. It is perfect for emergency situations like today. ⁉︎

Junmai Daiginjo made with "Kame-no-o" cultivated with great care by "Hidenori Suzuki," a farmer who grows "Kame-no-o" in an environment full of nature. It is the same rice used for Natsuko's sake. It is a great learning experience. It has a natural and elegant ginjo aroma and a clear taste with deep notes. It is a valuable sake that is released twice a year: freshly pressed in spring and aged in fall. This time we enjoyed the autumn aged sake. Next time, I would love to try the spring nama sake...I am excited to visit sake shops to see if I can find it. I am looking forward to visiting more sake shops to see if they have any available!

Today was the pre-show for my daughter's coming-of-age ceremony. I was looking forward to drinking it on this day♪ Raifuku Sparkling. I think the name of the wine is perfect for this day. We were blessed with good weather and it turned out to be a very nice anniversary! The carbon dioxide gas that spreads in the mouth gives it a refreshing taste. It retains just the right amount of the rice's natural sweetness, with a crisp, gassy aftertaste. My wife and I are enjoying it while reminiscing about our grown children.

A while ago, my sake-loving boss and I were talking about "Morishima" and how there are no stores around me that carry it. Yesterday, my boss surprised me with a bottle of "Morishima" and said, "I'm about to drink it, but I'm going to give it to you. I'm so happy! I'm so happy. ‼︎ It was my first "Morishima". I had it right away. It is a junmai daiginjo brewed with "Comet", a rice suitable for sake brewing produced in Hokkaido. It has an elegant ginjo aroma that spreads softly, and a perfect balance of light umami and acidity. The gentle, soft sweetness and moderate acidity are pleasantly crisp and delicious. I found another new delicious sake. ‼︎

I was at work until yesterday, so today is the first drink of the year. The first drink of the year is this sake that I have been curious about for a while. It is a Junmai Daiginjo from NOBU, a restaurant spread all over the world. It has a gorgeous fruity sweetness. The umami and acidity are mild and complement the sweetness. The sweetness disappears quickly in the aftertaste, leaving a slight bitterness.

It is a limited edition sake made with rare rice "Aizan" that is only available once a year. It has a gorgeous aroma and a crisp taste. It has a delicious taste that will not betray you. Best ‼︎

This is one of my favorite brands. I was very weak to the claim of "limited sale," so I bought it without hesitation. Elegant and pleasant aroma. Very soft on the palate. The original umami of rice spreading smoothly is beautifully balanced with gradually perceptible acidity, light sweetness, and light bitterness. It has a sharpness that makes it easy to drink. The rice is made from Kami no Ho, a variety of sake rice named after the delicious sake rice born in Mie, the land of the gods. I found myself falling for the charm of "Saku" all over again.

A superb ginjo-shu made from a fantastic rice suitable for sake brewing, "Tansokutobune". Polished to 35%, the rice has a fresh, fruity aroma and a refreshing taste. The sweet and refreshing ginjo aroma and rich rice flavor make this the best Watarifune sake. It is a refined sake overall with a firm sharpness. This is delicious. ‼︎
