I got a bottle of Tokushima's Asahi Wakamatsu, which I'd heard was recommended for heating sake, so I paired it with a New Year's celebration. I was able to taste the rich flavor of the sake. It was a delicious sake with a unique flavor that I'm sure will become a habit.

The first sake of 2021 was Kitashika Junmai Ginjo from Akita. It had a crisp, dry, sharp taste. It was the perfect sake for sipping without interfering with the food.

ギンタロウ。
There are three kinds of sake rice. Yamada Nishiki, Kame-no-o and Omachi are used. The sake has been made with a gentle flavor. You can drink it as much as you want.

It was a beautiful sake. The gentle sweetness of the sake rice went down the throat easily. After a little while, you can taste a slight sourness. I think it is a sake that has been brewed with the gentleness of Aizan.

When I drank it at room temperature, I felt a little inadequate because of the 13% alcohol content, but when I drank it lukewarm, as recommended, the flavor and good acidity of the sake spread to my mouth. It's also great as a lukewarm summer sake.

When you open the bottle, you can smell a good Ginjo smell. It is a Junmai Ginjo summer sake brewed with soft water from Nagano. It has a nice and refreshing taste with the sake rice flavor.

A faint ginjo smell rises, and a moderate acidity and umami are produced. It is a sake that you can drink with gusto. It is a sake with a good balance of acidity and umami. It is my favorite type.
