Ozeki is close to home. 100% Yamadanishiki from Hyogo Prefecture Polishing ratio 50%. Moderate ginjo aroma The more you put it in your mouth, the more you feel it. It is sweet, but the taste is dry through the throat. It is both gorgeous and has the taste of Nada sake. I think Nada sake is good in terms of cost performance. Ozeki's 10-step brewing is like a noble rotten wine, and I felt their great technique. This year, Ozeki-san is in charge of the "20-year-old Yamada-Nishiki," so I have high expectations for him.

100% Tokushu A Yamadanishiki. 70% polished rice. And, it is a sake brewer's yeast yeast yeast strain. Easy to drink. It is not gorgeous, and if it is said to be a honjozo, I can see why. It has a moderate acidity. It is a wonder that the more the cup is drunk, the deeper the flavor becomes.

[Today is Yamada Nishiki's birthday. It's his Yonenju🎉. This is a sen planned and sold by ten, a group of farmers who are engaged in the cultivation of Yamada-Nishiki in Kasai City. Connecting dots with lines. Young producers Atsushi Nagoya and Keiichiro Fujimoto brew on consignment for several breweries. The brewery uses organic Yamada-Nishiki raw yeast and brewed with Fukyu-Nishiki. Conventional cultivation is fine for the body, so organic is not about being good for the body, but an effort to connect the nature that nurtures Yamada-Nishiki to the future. Organic rice farming is very hard work, and it is difficult to pass on the cost of labor to the price. We will buy Shiroshika's protective cat sake, but we also want to protect future Yamada-Nishiki. Cemedine smell, sharp acidity with no aftertaste, and no perceptible alcohol content. It was great with greasy food (sauteed pork).

One of two breweries in Kasai City, Yamadanishiki seed supply area, Hyogo Prefecture. 100% Yamadanishiki from the Kukai district. Hangs with "QA". Fairly carbonated and oily. It does not have the flamboyance of Kuheiji, and is rather flat, but this makes it more flavorful and more drinkable. The young daughter has taken over the brewery and is switching from a large subcontractor to a small facility that brews year-round. This is a valuable sake brewery that embodies the terroir, and I wish them the best of luck. They hope to rebuild the Kiku Nippon brand in the future.

This brand is made with rice from Matsuzawa, Kato-shi, Hyogo Prefecture. Special A district, 100% Yamadanishiki, 60% special pure rice. There are other sake brands made with Matsuzawa rice, but this one was commissioned by Tsubozaka from the community. The label is said to represent the rice polishing ratio. Before the merger, Tojo Town was Tojo Town. Tojo Town was the dominion of the Torii clan (Mibu domain: now Tochigi Prefecture), a distant feudal lord in the Edo period, and was famous for the production of Banshu Torii rice. It was famous for Banshu Torii rice. It is available at Michi no Eki Tojo. It has a slightly pungent, deep Yamada-Nishiki taste. It smells like solvent. It is delicious. I would like to try the raw sake as well. There is Ozawa as a sibling sake.

Purchased at an antenna store "Niigata wo kome" in Umeda, Tokyo, at a time. My cat has a crocheted tail too... I liked the label too much to drink it and kept it, but I opened it because I didn't want the taste to change. The aroma and attack is weak, the richness comes later. Delicious 🐈.

Although it is in Kato-shi, the former town names were Sha-machi and Tojo-machi. Tojo is a Yamada-Nishiki production area along with the former Yoshikawa Town, and the test cultivation site when Yamada-Nishiki was certified as a variety was also located in Tojo Town. Kamiyui has a traditional image. The AEON in Kato-shi has a selection of sake from breweries all over Japan that are connected by village rice, but the gift corner has Kamiyui, and the roadside stations in the surrounding cities and towns also have regional village rice breweries and Kamiyui. The sake is quite yellow and tastes like old sake. It is a sweet sake with a sour acidic smell. I thought it might be damaged, but it was made six months ago, so I guess this is how it tastes. It is Junmai, but there is no description of the variety. I think it is delicious.

I stayed at Yumura Onsen for 2,400 yen per night and received a 2,000 yen regional promotion coupon, so I bought a cup of sake to compare three different kinds. I started with RICH. It has a pungent taste typical of Japanese sake. Yumura Onsen is not very big, but there is a museum called "Touji-kan" where you can see old tools and documents. Since it was off-season, we learned a lot from a Tajima Touji (the head of the Tajima Touji Association in Nanbu).
