This brand is made with rice from Matsuzawa, Kato-shi, Hyogo Prefecture. Special A district, 100% Yamadanishiki, 60% special pure rice. There are other sake brands made with Matsuzawa rice, but this one was commissioned by Tsubozaka from the community. The label is said to represent the rice polishing ratio. Before the merger, Tojo Town was Tojo Town. Tojo Town was the dominion of the Torii clan (Mibu domain: now Tochigi Prefecture), a distant feudal lord in the Edo period, and was famous for the production of Banshu Torii rice. It was famous for Banshu Torii rice. It is available at Michi no Eki Tojo. It has a slightly pungent, deep Yamada-Nishiki taste. It smells like solvent. It is delicious. I would like to try the raw sake as well. There is Ozawa as a sibling sake.
