Brewed with a yeast that the 9th generation brewer developed himself while in college. This yeast was found in the Ariake Sea and produces a lot of malic acid (refreshing sourness). This sake is reminiscent of white wine with a harmony of sweetness and acidity.
It is refreshing from the aroma and has no habit of being refreshing all the way through to after drinking. Easy to drink.
We had it with white fish.
