How many times have I already had this year...Tamura's Gingin Gin. It was a year in which I really got hooked on Tamura Sake Brewery. The Tamura Ginga was so shockingly good that I kept coming back to this one. It has a full-bodied flavor reminiscent of mushrooms and nuts.

New sake from Kyoto, Jurakudai. The label is flashy. The aroma of rice is refreshing. The taste is, how should we say it, the middle mouthfeel? Unlike the flashy label, the taste is very soft, not too sweet, not too dry. I wonder if it is what is called "Fushimi's women's sake. It is smooth and easy to drink, but I would prefer something with a little more character.

Kaisen's new sake, special honjozo. A refreshing aroma of rice. A melon-like sweetness spreads in the mouth for a moment, but it quickly disappears, and a refreshing bitterness stimulates the tongue. The richness of Kasen's typical nutty flavor can also be felt, albeit slightly, but firmly. I'm glad to see such a wonderful taste that I'm sure I'll be hooked on Kasen again this season.

Tamura's Ginga, a delicious local sake from Fussa. The aroma is subdued and mild. It has a refreshing mouthfeel with a nut-like richness and bitterness. The finish is a strong, fresh sake-like flavor that spreads out in a blur. There is nothing modern about the aroma or taste. That is also good. It is not easy to drink. But it is still delicious.

Kaisen's summer sake. It was also served at the "Nishitama Sake and Sakeware Party" co-hosted by Tamura Sake Brewery, Ishikawa Sake Brewery, and Ozawa Sake Brewery, which I attended the other day. It was a truly enjoyable event. I could not taste it coolly at that time, but it had a fresh aroma like green plums, and a spicy, bitter taste. It had a spicy, bitter taste with a nutty richness. I'm afraid I'm going to get addicted to this nutty, rich taste of Kasen.

Hazy Sake on Akagi Mountain. I miss the days when it was called the White Comet of Akagi... (a lie) A modest sweet aroma of grain type. The taste, can you feel it? Can you feel it or not? It has an exquisite sweetness. The acidity is also moderate, kind of like powdered potassium made with 1.5 times as much water... it's dry like a hypotonic sports drink.

This is an unfiltered, unfiltered, unblended, raw sake from the fantastic sake, Tokubetsu Honjozo Kaisen. The heady aroma is a mixture of a zing of alcohol and a sweet aroma like cider. The overt aroma has a hint of melon-like sweetness. The mouthfeel is thick and foamy with a tingling sensation on the tongue. The sweet, rich flavor ends with a peppery, spicy aftertaste. The spicy taste that makes your mouth tingle will be addictive.
