We had a rare chance to try Senbyo again at Fukuhara Sake Brewery in Taito-ku, Tokyo.... I'd like to try some of the more aggressive regular sake. I would love to get some of the more aggressive plain sake. I would like to support them.

I had a Yamahai before and liked it because it was powerful and mellow, so I had a draft from Kimishimaya... It has a pleasant aroma and when you put it in your mouth, it has a rich, mellow flavor with a bitter aftertaste and a dry dry taste.

I had been drinking refreshing sake because it was so hot in the summer heat, but after drinking Juji Asahi, I reconfirmed that I like rich, dry sake with a full, rounded taste that expands and sharpens...Akirika Junmai Aragoshi Nigori...it goes well with meat...a nigori sake with a delicious, sharp taste that is also good heated - like Takezuru. It's a hard-core sake like Fusozuru's Nigorizumi.

The first Crossed Rising Sun I bought myself... It was a bit dry when I first opened it. It was a bit bland when I opened it, but within a few hours after I brought it home, the matured flavor of Gohyakumangoku, the dry taste and the sharpness of the machete like Shinzan, came out. It is my favorite Shimane flavor.

I saw Sogen's active Nigori-Nagari in the neighborhood...it looks mellow from the outside (lol). I had a hard time pulling it out of the bottle, because if I messed up with the foam, it would blow away (sweat). It is delicious!

We got a rare Ko no Tsukasa in Tokyo at IMADEYA! It has sweetness and bitterness when chilled, and when allowed to warm up to room temperature, it is very soft and has a strong umami flavor. It is a delicious sake that I want many people to try!

When I tasted it right after I bought it, I thought it was off. I thought it was a bit out of the ordinary (sorry lol), but after I got home and tasted it carefully, I found it to be a unique and delicious sake with a calm and matured taste, rich yet mellow, and a complex flavor on the tongue that made me want to eat something. I like it cold or hot.

It is a sake from my hometown, Chiba. I thought there was not much sake in Chiba, but recently, Kangiku and other sake breweries are flourishing. It's the first time I've had this sake, but it's aromatic, fresh, and has just the right amount of acidity.

We have unfiltered nama-shu and fire-aged nama-shu. The raw sake is rough and the fire-aged sake has a great aroma. When it was first introduced to me at the bar, I thought, "What the heck is this? I thought "What is this?" when it was first introduced at a bar, but I wanted to drink it the next day.
