I like the clarity and sharpness of Ginga, so I also bought a bottle of Omachi to compare.... I like the clarity and crispness of Ginga, so I bought some Oumachi to compare... The acidity is amazing... After a day of drinking it, the rounded flavor comes through. I personally like the sparkling clear Gingin, but I would recommend this one to the Oumachi nist who comes with a thud. Kame-no-o had a loud and lively flavor...I must try Miyamanishiki too!

Encounter at the SAMURAI festival in Ueno Park I wanted to try this brand, a rare sake that is rarely sold in Tokyo. It was soft, beautiful, and had a strong and refined umami flavor.

I bought a bottle of Jungin Yumachi because I enjoyed the Junmai I had before... It's good cold. The flamboyance and crispness of the omachi in the calmness of the sake, and when lightly heated up, this is delicious... the flamboyant and full flavor quickly disappears and the sake is soft and beautiful✨.

Re-printed. The ordinary Shinkame is sweet "generally spicy (lol)" and Mahojin is really spicy when drunk cold, fully fermented, with the scent of dead grass... When heated to around 60℃, the umami spreads and sweetness comes out, and it slowly finishes on the tongue. It is a strong, ripe, delicious sake with a clean, crisp taste like a ginjo, overturning the image that Gohyakumangoku sake is hard, sharp, and poor. Ihyakumangoku is delicious!

At the Shiga Products Museum...Tamakae's nama-shu, when first corked I felt it was hard and austere and thought "Oh, it would be good if it were refrigerated for a year", but a few hours later when it was cold or "room temperature" I felt it had a delicious flavor and it was delicious when warmed up, with a light roundness. Ayagiku Yamahai Junmai Oceto from Kagawa Prefecture... The sake is both showy and beautifully balanced, and is pleasant to drink when warmed up. It is delicious and can be enjoyed with a wide range of everyday meals when heated. The label and the atmosphere of the sake are so plain that you might pass it by if there were a lot of sake on display, but I think drinkers will like it!

Immediately after the bottle was opened, it smelled like rice..............................not to everyone's liking. I thought I would like it if it was a little more clear if it was a little less thicker, but on the third day I warmed it up to 60 degrees Celsius and it was a delicious sake with a soft, sweet aroma and a light, refreshing taste. I'm happy to eat and drink it!

I was looking for a dark sake from the Owari-Mikawa area, in connection with Ieyasu Tokugawa... Shiraoi: Unfinished raw sake made with young water, definitely a hit with people who like Chochin and Yonemune (lol). It is delicious. If you like dark sake, this is a must-try!

Shinkame's Senkame in February 2003... back then, 80% rice polishing ratio was the cutting edge of the times! It had been sitting in the closet for 20 years, warmed up (lol). New? The nougat-like oiliness of those days was gone and it was withered. The sweetness of the aftertaste is pleasant. The fact that they just copied and pasted a label from a bottle is also typical of Shinkame!

It's cold at the beginning of the year and I want to drink hot sake with warm snacks, so I tried Shinkame, the sake that got me hooked on sake 20 years ago... I heated it up to 65 degrees Celsius, but it didn't give me a whimper...
