I was honored to be able to buy a bottle of Chrysanthemum, so I opened it right away! The aroma is sour and sunburst-like! The taste is matured, and I feel that it has become more intense, with a stronger and more complex flavor. It has a sour type of acidity, but without sweetness, and is finished with a lemon-like bitterness. I would like to drink sweet Koei Kiku as well. As a stand-alone, it's a nice sake. Thank goodness I was able to purchase it!

I'll open it up to sort it out! The aroma is nice, sour and dry! Taste is soooo good, the flavor rushes over you from the moment you drink it! I am happy. It has a sourness on the entry, but then the sweetness and umami that is typical of Aizan, and finally the bitterness that finishes it off is fantastic! Today I'm pairing it with yakitori, and I think it's a great combination because I don't think it's going to overpower the flavors! It's so good that I wish I'd bought another bottle! Thanks for the always delicious Tenmi!!!

I got to buy a bottle of Sharaku's Omachi, so I'm looking forward to it! The aroma is not that fragrant, but sweet and sour. The taste is rather acidic, and the sweetness may be restrained. The bitterness is rather strong, as is typical of Sharaku. When you put it in your mouth, it has a gorgeous aroma in your mouth. It has a royal taste, but the acidity makes it easy to drink. Personally, I would prefer a little more sweetness. I think it is good with meals. I feel this acidity is not Omachi. I think the sense of bitterness and complexity comes from Oumachi. It's delicious the more you drink it! Thanks for a great tasting saké!

I don't have much liquor in stock, so I'm opening it up! The aroma is sweet, slightly mellow and gorgeous. The taste is delicious! I'm drinking Hakuten right now, but the overall flavor is richer than Hakuten, and I can definitely taste the umami. It has a fresh, slightly effervescent taste that is typical of Tenbi, but with a rich, delicious flavor. I thought it might not be so good when I drank it before, but it is still delicious!

For cosmetic reasons, I went with White Heaven! The aroma is sweet and sour, white peach-like. The taste is stable sweet, with a firm sourness, yet with a gentle bitterness at the end, delicious! It's sweet and perfect, with an acidity and bitterness that keeps you coming back for more! It's that kind of saké that's great on its own or paired with other saké! Thank you for always having such great sake!

This is the second one I got! The aroma is a nice aroma of koji. The taste is much less sweet than the previous one. The basic tone is sourness and dryness. I think this one goes better with food. However, I prefer the previous sweeter one. However, I think it's good that this one is made without giving too much of a sake taste. I'm glad it's a local sake.

I'm opening it because it looks like I won't be able to store it until October 1! The aroma is dry and hardy, typical of Kaze no Mori. The taste is delicious! It is quite dense, with a slight effervescence, but also dry, yet with a good sweetness and umami. Delicious! Today we are having a hot pot with motsu-nabe, and it seems to go well with it. Kaze no Mori is delicious after all! I heard they changed the alpha type, so I'm quite curious... couldn't wait until October, but if it's still around, I'll definitely buy some! Thanks for the great tasting sake!

It's a gift! The aroma is yeasty and nice. The taste has a sweet base, no bitterness at all, and a fizzy feel, so it doesn't just end up sweet, it's like you can drink it all the time without getting sick of it! Delicious! The fizziness is so strong when the bottle is opened that it's hard to detect much acidity, but there is a moderate acidity, and I think that's another point where the balance is well achieved and it's delicious! I think the pairing goes well with sashimi, and I think it would also go well with carpaccio or something like that. It is sweet, so as a toast, it is the best. I can recommend it to people who don't drink much sake! I'm getting another bottle, so looking forward to it!

I was able to buy it today, so here's a quick opening! The aroma is sour and slightly sweet, with a hint of white peach. The taste is based on the sourness that is typical of Senkyoku, and while it is rather dry, there is a lingering sweetness that comes slowly in the aftertaste. It is consistently delicious! I'm glad I got a bottle. The more you drink, the more sweetness you feel. I wonder if the sweetness comes from the Omachi. I think the dryness comes from Yamadanishiki and Kame-no-o. Sengoku's assemblage is the best! Every one of them is delicious. They must be sold out, but if I see them again, I'll buy some! Thank you for the delicious sake.

I'll open it up for you to sort through! The rest is because I worked hard yesterday. The aroma is of a sourness typical of Shinsei. On the palate, it's consistent goodness! Yum! More than the acidity, the astringency and sourness of the wooden vat is delicious. Is the sweetness moderate? You can definitely taste the astringency and acidity of the wooden vat without feeling the sake at all. The quality of the sake is very beautiful, and although it may sound strange to call it rough, there is no strange heaviness at all. I would have liked a little more sweetness, but considering it's a flax cat, I guess it's possible! Very tasty! Thanks again for the great tasting sake!

I got to buy a bottle, so I'm going to drink it! The aroma is acidity-based and Shinmasa-like. The taste is acidity-based and clear, with no bitterness at all. There is almost no sweetness. However, it is not sour. It is much gassier than the last time I drank it. When I opened it, I heard a pop. Personally, I think it would be better if it had a little more sweetness. I am also looking forward to this being brewed in a wooden vat! I think it will be more like Shinmasa. It's delicious!

I've always wondered about those armpit labels! I'm looking forward to it! The aroma is a bit hard-edged with a sour undertone. The taste is delicious! It has a sour base with a hint of sweetness. After that, a mild bitterness comes in and finishes it off. It's as tasty as it's reputation! I think it is good on its own or with Japanese food. I'm pairing it with fish today! I was looking forward to this new Hououmida! The aroma is sour and sweet, with a pineapple-like aroma that is typical of Hououmida. The taste is a beautiful sake, with a hint of sweetness and a rather bitter undertone. The bitterness is not unpleasant, and it is not a lingering taste that disappears quickly. It is interesting and delicious. The flavor is modest, but it seems to go with everything with meals. It can be drunk on its own, but I think it is better with a meal. Last in our series on the wrong rice! My fridge is getting a squeeze, so I'm opening it up! The aroma is rather acidic. It could be said that it is typical of Amami, but I think it is a little stronger than usual. The taste is sweet and delicious! It is more umami than usual! The sweetness comes first, and then the umami spreads with a moderate acidity. It is more intense than usual. I think it would pair well with Japanese food, sashimi, and sweet food. We are having sukiyaki today, so I think it will go well with that! But it's still great as a stand-alone! Thanks for the great sake every month! I will continue to patronize you!

I'll open the Yonotori for now, after all the inventory and hard work I've put in this week! The aroma has a sourness and an austere scent of wooden vats. The taste is sweetness, followed by sourness and the astringency of the wooden vat. It's deeply delicious! It has a stronger sweetness than the Yonotori we had previously, which gives it a kijo-zake character. It's hard to pair it with food, but I think it's great as a toast or on its own. Shinmasa is delicious after all! It is also interesting that the flavor changes depending on the lot. Thanks for the delicious sake!

A 2 year old drink that I didn't have time to drink. I wonder if it's ok w The aroma isn't bad! You can also taste the acidity. The taste is not that bad! I'm looking forward to Sake Mirai! The aroma is nice, sour and a little sweet! The taste is based on sweetness, and the quality of the sake is quite beautiful! The bitterness is subtle and quiet, with a gentle sweetness that is like wasanbon and lingers on the palate! The price is quite expensive, but it's quite delicious! This is a quality that makes sense at this price. I haven't been able to buy Mimuro cedar recently, so I will try it again next time. Thanks for the delicious sake!

It's one I look forward to every year! The aroma is a bit sour and dry. The taste is like a sweet treat! It is not just sweet, but a quiet spread of sweetness. The bitterness is behind the sweetness, so you don't feel much alcohol and the sweetness spreads quietly. This is delicious! However, I guess I would recommend it on its own. I think sashimi and Japanese food would go well with it. Pairing seems to be quite difficult. I may not have another bottle left, but if I had another bottle, I would love to have it. I would love to buy another bottle next year! Thank you for the delicious sake.

It's a local brew, one I really wanted to buy! The aroma is quite gorgeous, with a hint of pineapple. The taste is drier than I expected, very light on the palate, with a little sweetness coming in later. It has a dry aftertaste, so I would not recommend it to beginners. I think it goes well with sashimi. It's like a sharp taste that doesn't interfere with the food at a meal. I am sorry to say, but it is a little different from what I was looking for. I think it would be better if it had a little more umami and sweetness. Shigemasu is a local sake, and I would like to buy it again in the future if I have the chance! It's inexpensive, too.

We have seafood today, so I'm going to open a bottle of Tenbi I've been saving! The aroma is still hard and dry. The taste is still very stable and tasty! I feel like it has a little bit of flavor, and it is a little bit sweet and tasty. It has a sourness, but also has a strong umami flavor. The last time I drank it, I thought it was drier and clearer, but it has a nice flavor to it! This is good! So glad I opened it! Thanks so much for the always delicious Tenbi!!!
