I'll open the Yonotori for now, after all the inventory and hard work I've put in this week!
The aroma has a sourness and an austere scent of wooden vats. The taste is sweetness, followed by sourness and the astringency of the wooden vat. It's deeply delicious! It has a stronger sweetness than the Yonotori we had previously, which gives it a kijo-zake character. It's hard to pair it with food, but I think it's great as a toast or on its own. Shinmasa is delicious after all! It is also interesting that the flavor changes depending on the lot. Thanks for the delicious sake!
