I was able to buy it today, so here's a quick opening!
The aroma is sour and slightly sweet, with a hint of white peach. The taste is based on the sourness that is typical of Senkyoku, and while it is rather dry, there is a lingering sweetness that comes slowly in the aftertaste. It is consistently delicious! I'm glad I got a bottle. The more you drink, the more sweetness you feel. I wonder if the sweetness comes from the Omachi. I think the dryness comes from Yamadanishiki and Kame-no-o. Sengoku's assemblage is the best! Every one of them is delicious. They must be sold out, but if I see them again, I'll buy some! Thank you for the delicious sake.
