The aroma is of a sourness typical of Shinsei. On the palate, it's consistent goodness! Yum! More than the acidity, the astringency and sourness of the wooden vat is delicious. Is the sweetness moderate? You can definitely taste the astringency and acidity of the wooden vat without feeling the sake at all. The quality of the sake is very beautiful, and although it may sound strange to call it rough, there is no strange heaviness at all. I would have liked a little more sweetness, but considering it's a flax cat, I guess it's possible! Very tasty! Thanks again for the great tasting sake!
