As a Junmai sake drinker, I really wanted to have a Junmai sake from Kenbishi, so I bought it online. The color is light amber. The matured flavor reminds me of chocolate aroma. It is a solid sake with a great posture.

I drank Handa Go after reading the comments from others. It does have a yogurt-like mouthfeel, but afterwards it feels like water and is easy to drink. It is not mellow and goes well with Yamachan's spicy food!

Rice used is unknown. According to the owner of the sake shop, the sake is aged for three years, but there is no strong sense of aging, and it is a dry junmai-shu with a good acidity. It is a dry junmai-shu with a lot of acidity. The sweetness that spreads fluently and the spicy astringency in the latter half are very unique. After a few days, it becomes more crisp and easy to drink. For my taste, I'd like to have more of a woody or smoky flavor. Either way, it's not a type that will appeal to everyone. The mainstay of this brewery is Yamahai brewing, so it will be interesting to see how peculiar it is.

Kinmyo Junmai Sake 60% 15-16% 720ml Kinmyo by Negami Shuzo is my new favorite sake. The acidity is up from last year. The characteristic custardiness is almost gone, and a green apple-like fruitiness has been added instead. It also has a spiciness to it. It is a different taste from last year. The rice used is Gohyakumangoku. I bought it at the end of last year at an antenna store in Toyama. I didn't know about this brand. The color is a light amber. The color is pale amber, and the flavor is just as it should be. It's relatively easy to drink because it's crisp and not overpowering, but it didn't seem to suit my partner who likes floral and sweet flavors. It didn't match well with the grilled chicken, but I think it will swell up with time, so I'll leave it for a while. It's quite a unique sake, and I don't dislike it!

I have had Taitozan before, but I don't remember much about it, so I bought it for the first time in a while. It has a slightly astringent white wine-like aftertaste with almost no sweetness. I think it is best to drink it with fish dishes, which is a standard white wine. Since it is winter from now on, yellowtail and radish would be delicious. I, of course, drink it only with sake.

☀️ Masamune hunters go today🍶. I found an undrinkable Masamune at "TABI BAR & CAFE SUZUVEL" 😆. It is a Masamune brewed by Obata Shuzo, famous for Manotsuru. It has a mineral aroma 😳. Clean herbal mouthfeel 🌿. The aroma is so rich that the sensation of sake fades 🫥. Rice flavor🌾 masks the sweetness and acidity, and the ginjo aroma stimulates the nose. It leaves a slight bitterness and astringency in the aftertaste🙄. It was a new drinking experience with a unique flavor 🤗. How cool to "speak without speaking" 🤩. I thought I should come up with a catchphrase like "Nice Masamune without talking about it" ❓🤣. Nice Masamune👍

A 1-goupe bottle that I had gotten at Yamada-san, a sake dealer in Ikebukuro Seibu. I check the small refrigerator near the cash register, which is mainly small bottles, every time I go there. It is Kamerei Mannen from Hiroshima🐢. The classical texture gives it a ginjo-shu feel.

Kamerei today. Turtle age 10,000 years. It may be rude to say that it is not from Shinshu, but it is Kamerei from Hiroshima. The rice is rare, and 100% linear heart white rice produced in Hiroshima Zouga, which is said to be a miraculous ancient rice, is brewed at a milling ratio of 50. Perhaps because it was pulled in by the watermelon-like label, the fruity, watermelon-like first sip gives way to a dry taste with a solid rice feel and alcohol. It's all nicely put together, but there's a sake-like quality that can't be hidden. This is probably the sake drinkers of yesteryear like ‼️✨
