Hyogo Prefecture Mizuho Kuromatsu Kenbishi Rice polishing ratio Alcohol 17.5 Junmai sake from Kenbishi. As a Junmai sake drinker, I really wanted to have a Junmai sake from Kenbishi, so I bought it online. The color is light amber. The matured flavor reminds me of chocolate aroma. It is a solid sake with a great posture.

I bought this bottle at Belk's on my way to work because my body was in need of a drink. I got the impression that it is not a traditional sake, but a modern, clean or refreshing drink. And the specs are Rice used: Domestic rice (both rice and rice malt) Polishing ratio = 50%. Sake meter = around 2.0 Acidity = around 1.4 Amino acidity = around 1.1 (From the brewery's website) If you are going to drink a cup of sake, you want it to have this level of quality. This is a bottle from a long-established brewery in Handa, Aichi, which has been in existence since the Edo period.

Rice used is unknown. According to the owner of the sake shop, the sake is aged for three years, but there is no strong sense of aging, and it is a dry junmai-shu with a good acidity. It is a dry junmai-shu with a lot of acidity. The sweetness that spreads fluently and the spicy astringency in the latter half are very unique. After a few days, it becomes more crisp and easy to drink. For my taste, I'd like to have more of a woody or smoky flavor. Either way, it's not a type that will appeal to everyone. The mainstay of this brewery is Yamahai brewing, so it will be interesting to see how peculiar it is.

Kinmyo Junmai Sake 60% 15-16% 720ml Kinmyo by Negami Shuzo is my new favorite sake. The acidity is up from last year. The characteristic custardiness is almost gone, and a green apple-like fruitiness has been added instead. It also has a spiciness to it. It is a different taste from last year. The aroma was mild, with a nice, smooth sweetness and umami 😊There was also a touch of acidity afterwards, which made it seem a bit dry 😚👍. It seemed like a sake that goes well with food 🥳.

The rice used is Gohyakumangoku. I bought it at the end of last year at an antenna store in Toyama. I didn't know about this brand. The color is a light amber. The color is pale amber, and the flavor is just as it should be. It's relatively easy to drink because it's crisp and not overpowering, but it didn't seem to suit my partner who likes floral and sweet flavors. It didn't match well with the grilled chicken, but I think it will swell up with time, so I'll leave it for a while. It's quite a unique sake, and I don't dislike it!

We also had a chance to drink some more sake from Toyama Prefecture. Taitozan, the main brand of Tonami City's Yoshie Sake Brewery. The factory where it is bottled and processed caught fire this spring and was unable to ship, but with the cooperation of the Toyama Sake Brewers Association, it was bottled and shipped by Masuda Shuzo, the brewer of Manjusen. Purchased at an Aeon liquor store in Tonami City. The aroma has a strong alcohol-like scent. It tastes like aged sake with a strong sourness and bitterness. It is really like drinking aged old sake. Sake is a very deep drink.

〰fixture Yamada Nishiki 2023/07 Sake by Sake Sengano, famous for "Kawanakajima" and "Genmai". Sake by Sake Sengano, famous for "Kawanakajima" and "Genmai". It is also called "PB Sake of the Holy Land It was hard to find a good time to buy it. I was finally able to purchase a bottle of my favorite Yamada's Tokujun! It was a great sake with excellent specs and good value for money 😋.

A 1-goupe bottle that I had gotten at Yamada-san, a sake dealer in Ikebukuro Seibu. I check the small refrigerator near the cash register, which is mainly small bottles, every time I go there. It is Kamerei Mannen from Hiroshima🐢. The classical texture gives it a ginjo-shu feel.
