One sip and it's old sake?
I was surprised because it was a little expensive, but to be honest, it is better lukewarm than cold.
The alcohol content is moderate and the old sake-like taste is not that strong, so it is very mild.
You will not get tired of drinking it.
But unfortunately, the cost is not so good 💦.
Junmai sake with a rice polishing ratio of 60%. It is a fairly dark, bright yellowish-yamabuki color. It has a sweet and sour aroma with a sense of maturity. The taste is not as sweet as expected, but has umami and strong acidity. It has a strong acidity. It has a peculiar taste like Yamahai. When chilled, the aroma and acidity become less noticeable and the sweetness becomes stronger. Personally, I find it easier to drink.
It has a sweet aroma of rice, yellowish rather than clear because it is an aged sake, a unique taste with a slightly strong bitterness and umami, and a slight (?) flavor. The taste changes even with temperature changes, and the closer it gets to room temperature, the more rounded it becomes.

<A firm, gently wrapped, slowly delicious sake.
PB sake from Takagaki Shuzo, the brewer of Ryujinmaru.
This sake was brewed with the exact same specifications (rice, water, and yeast) as the Junmai Ryujinmaru. However, while Ryujinmaru is a strong, unpasteurized sake, this is an easy-drinking, watered-down, fire-aged sake.
The aroma is soft and sweet. Oh! It does not have the gusto of Ryujinmaru, but it is gentle. But there is definitely a similarity between the two.
The taste is the same. It has a strong but gentle flavor. It is slowly delicious. The rich sweetness that spreads slowly behind the umami is also wonderful. Yummma! The most delicious dish of the day!
If Ryujinmaru is a strict father, Takagaki is a gentle mother. But just like Ryujinmaru, it was made in May 2022, so it is still new, but somehow it has a sense of maturity.
To use a Ghibli analogy, she is Toeto from "Nausicaa of the Valley of the Wind. She is the mother who asks Yupa-sama to be godmother to her baby in the beginning. She is a woman who has the firmness to live in a harsh environment and the gentleness of a mother.

My partner bought this sake as a Wakayama souvenir.
Apparently, this sake became popular because it has the same name as a female character from Wakayama named "Takagaki Kaede" who appears in a popular video game. I was curious about this sake, which is only available at a store called Matsuo Sake Shop ^ ^.
The color of the sake is dark and mellow looking.
When I took a sip, I was excited to find that it had a savory rice flavor, strong acidity, and an overall bitter bitterness. It is good for drinking at home at room temperature.
No, but it may be hard to drink for those who don't drink sake, but it's amazingly popular that sake shops have become sacred places.
I learned that there are many ways to get into sake.
I had this at Mizubeza, a local sake bar near Wakayama City Station. The smokiness that I've never encountered before (the master said it's like a barrel...) is going to make me fall in love with it. A gem I'd drink again anywhere!
Finally, I found Takagaki... and it's delicious!
The aroma is...cocoa? It's not a trendy flavor, but it's super balanced. Personally, it's best at room temperature.
Above all, this sake goes well with all kinds of Japanese food and snacks and doesn't get in the way. But it has a strong statement. The set of Squid Somen is also delicious, everything is great. (It sells out quickly, and it's not sweet.) It's not a sake I'd recommend to everyone, but it's one you should try at least once. (I bought a whole bottle, so I'm sure I'll be able to warm it up... I want to drink Ryuujinmaru too...)
The current toji, Nobuyo Takagaki, used to do accounting and such, but after her husband passed away, she took over his will and is now making sake almost entirely by herself. I can't imagine how hard it was for me, but if it is put into this taste, I must be grateful and drink it.
Still, it's delicious. I wonder if I can buy it again...?
