Since it's spring🌸, I think I'll have another bottle of sake with spring in it. I bought a bottle of Shunshin by Nishide Sake Brewery in Komatsu City, Ishikawa Prefecture. I've been curious about this sake for a while but never got around to it. I will have it with boiled flounder 🙏. I thought it might be a bit strong, but it wasn't. It has a nice richness, sweetness, acidity, and a mellow feeling 😆. It's a bit like a lighter version of Tamagawa. As the label says, I preferred it at room temperature rather than chilled 👍

I saw it for the first time at a department store tasting sale, so I bought it. It's not listed on the label, but according to the brewer's description, it's unfiltered undiluted sake. It says "light nigori" but it's not cloudy at all (laughs). It's refreshing and easy to drink. The acidity in the second half is impressive.

Personal preference 3.6/5 Rice polishing ratio 60 Alcohol content 15 I participated in a remote drinking party for the first time! It was fun to see so many of you cheerful people! I will comment more than ever 🫡. I brought a bottle of Nishide Sake Brewery's Shunshin with me at that time! The label is beautiful, as it was made in collaboration with Yoshitaka Amano! The color is quite amber. The taste is bitter and umami with the sweetness of rice! It tastes like 80% cacao bitter chocolate. It tastes like an easy drinking version of Tamagawa's vintage! I ended up drinking 3 cups of this wine in a remote drinking session! I think this is the first time I drank 3 cups of wine when I was home alone! Thank you very much for the drink 😋!

Shunshin Namaemoto Tsukuri Junmai Sake Kame-no-o 83%, fire-brewed 720ml Kame-no-o rice harvested from two acres of rice is milled with coins to make this sake. This is the October product of the Mizuhata Hanpukai. It is already very old sake-like, and I drank it chilled, but it would have been better warmed up. I think it tastes better when it is aged. I drank it the wrong way ( ;) )

It has a firm umami, which is typical for a sake made from the yeast, and a juicy acidity that is more crisp than other Shunshin. I also drank a hi-ire after this, but the hi-ire tasted a little bitter and subdued. It is amazing how much the taste can be changed just by adding hi-ire!
