Last week I chose "Hishiko" for my mother's birthday 🎂. And this week, for my father😇s birthday, I chose the sake... It is "Harugokoro Junmai Sake Kibune Hatsu Shibori" from Komatsu City, Ishikawa 🍶. I was attracted by the fact that it has my father's name on it and the fact that it was the first brand I had seen 🌸. After the apple-like acidity, the rich flavor and alcohol taste reminiscent of sake lees was impressive, and the sip after sip went on and on! 🥰 The second photo is a two-shot with "Hishiko" since we were there! 😆 😆

Since it's spring🌸, I think I'll have another bottle of sake with spring in it. I bought a bottle of Shunshin by Nishide Sake Brewery in Komatsu City, Ishikawa Prefecture. I've been curious about this sake for a while but never got around to it. I will have it with boiled flounder 🙏. I thought it might be a bit strong, but it wasn't. It has a nice richness, sweetness, acidity, and a mellow feeling 😆. It's a bit like a lighter version of Tamagawa. As the label says, I preferred it at room temperature rather than chilled 👍

At a tasting at Nishide Sake Brewery in Komatsu, Ishikawa. 100% "Hyakumangoku No. 68" (Ishikawa Sake No. 68) "Hyakumangoku no Shiro" (produced in Ishikawa) is used. The yeast is "Kurazuke Yeast No. 10". Soft sweet and sour taste of lactic acid type. The umami of the rice spreads. The taste of rice spreads out, yet the mouthfeel is clean and refreshing. At a tasting at Nishide Sake Brewery in Komatsu, Ishikawa. Kame-no-o" is made from 83% polished "Kame-no-o. It is a strong sake with a robust flavor. At first, I thought I might get tired of drinking it. At first, I thought I might get tired of drinking it. but the muscat-like acidity refreshed me and and it is not too strong, so you can enjoy it easily. It's not too harsh, so it's quite drinkable. Personal preference 3.6/5 Rice polishing ratio 60 Alcohol content 15 I participated in a remote drinking party for the first time! It was fun to see so many of you cheerful people! I will comment more than ever 🫡. I brought a bottle of Nishide Sake Brewery's Shunshin with me at that time! The label is beautiful, as it was made in collaboration with Yoshitaka Amano! The color is quite amber. The taste is bitter and umami with the sweetness of rice! It tastes like 80% cacao bitter chocolate. It tastes like an easy drinking version of Tamagawa's vintage! I ended up drinking 3 cups of this wine in a remote drinking session! I think this is the first time I drank 3 cups of wine when I was home alone! Thank you very much for the drink 😋!
