100% "Hyakumangoku No. 68" (Ishikawa Sake No. 68) "Hyakumangoku no Shiro" (produced in Ishikawa) is used.
The yeast is "Kurazuke Yeast No. 10".
Soft sweet and sour taste of lactic acid type.
